Lunches

All this meal plan talk about dinner got me thinking about lunches. I have a really hard time with lunch. I either don't eat it or I eat something gross and unhealthy.

I need some quick and easy (little to no prep) ideas but I don't really like sandwiches. I do eat leftovers a few timesa week but I am not a huge leftovers fan.

I also like to make stuff sometimes that I can share with DD.

I'm the same as you. I'll eat leftovers if I'm home if not I'll buy whatever I'm craving at the moment. Which usually turns out to be unhealthy and can get pretty expensive.

We eat a lot of leftovers. Some of our other go to lunches are grilled cheese, pb&j, chicken fries and mac & cheese. We also have fruit, sometimes cottage cheese or yogurt. I've been making yogurt parfaits for myself- vanilla yogurt, fruit, and granola.

Well today we are having cheezy scrambled eggs with turkey. I put mine in a tortilla. We eat chicken nuggets and french fries, frozen pizza, noodles with butter and parmesean cheese, Mac n cheese, various Campbell's soups. I am just so burnt out on this stuff and I am so uninspired. Maybe I can find some lunch recipes online. If I do I will post them here

Also, Bridget, that is what I did when I was working but now I am home with LO 25 minutes away from town with a very small eating out budget. I used to run to Safeway all the time!

I'm kind of bad about lunches too. One of my staples is jambalaya with smoked turkey sausage. Breakfast foods are good (like you had today - sounds good!).

I always say I will make fancy salads but I never bring myself to buy all the ingredients I like in salad.

I'm not really a lot of help as we do leftovers 99% of the time. It's easy and I liked it at dinner, so why not?

What about wraps?

A few thoughts are:

Tuna Boats (mix tuna like you would for a sandwich, then put it on top of half an avocado with some salt if it tastes too bland)
Salads
Nachos
Creamy Rice (It's basically white rice and cream of mushroom)

Thanks! I just picked up a recipe book for quick easy lunches that pack a punch for teenagers but I figure if it is for teens they will definitely be quick and easy!
