  • Yes! I'm not sure why it's called that, but here's how to make it:

    1 lb ground beef
    1 onion
    1 can cream-style corn
    1 can diced tomatoes
    1 can Rotel
    1 can Spanish rice
    1 can mixed vegetables (drained)

    Brown ground beef with onion.  Mix all ingredients and cook at medium (I think?) heat for 90 min.

    My sister likes it better without the rice, but I've never had it like that.  I turn mine up to a higher heat at first, then lower it to let it simmer.  It's really good and versatile, you can add/take away :) This is actually half the original recipe, and it's plenty for both of us for 2 or 3 meals.

  • You're welcome!  I am making a double recipe because my IL's are coming in tomorrow night, and that way we won't have to go out when they get here.  Let me know how it goes :)

  • I didn't know you could buy rice in a can.  Where would I find this?
  • I didn't either until my uncle made this. I can only find it at Kroger, but that's the only place I've looked besides Walmart and they didn't have it.  It's in the section where they have the Spanish/mexican stuff.
