NE1 have a good soup recipe?
I want to make some type of soup for dinner this week. I don't want to make any type of chili though. Ideas? TIA

I really like my loaded potato soup... However, I sort of throw it together so you'll have to bare with me But it's very rustic & hearty!
When I'm making it, I usually like to peel, chunk, and boil 1-2 potatoes per serving. When they're soft, I'll take them out of the pot and put 2-3 tbsp of salted butter in the pan with 1-2 cloves of garlic, salt, pepper, and half of a medium-sized onion (minced). Once the onion is soft and translucent and the kitchen smells like garlic, I'll put the cooked potato chunks back in the pan and stir them up, making a point not to be careful and mashing here and there to have a few different textures going on. Then I take a packet of instant mashed potatoes and I put however much liquid is required, plus half with the actual instant potatoes. After it sets (or whatever instant mashed potatoes do), I stir it up and add milk until I get it as thin/thick as I want it... But be sure to make it more on the runny side because it will begin to reduce as you let it simmer. Finally, I add shredded cheese (I like colby jack) and let it cook until it's warmed through. Top with a dollop of sour cream, chives, and crumbled bacon.
edit: for clarity's sake... I drain the potatoes when I take them out of the pot :-) aaand... be sure to s&p to taste, it needs a good bit of salt and fresh cracked pepper gives it a nice zip. If you don't have any fresh cracked pepper, the dusty stuff works too

I love potato soup and I usually hve this stuff on hand so it's not like I have to go to the store. (I got this from KellieRay)
8-10 Potatos
3 cans chicken stock
1 block of pepper jack cheese
2 cans cream of onion
2 cans cream of celery
1 pint half and half
Peel and cube potatos. Boil the potatos in the stock until tender. Add soups and put on medium heat and simmer. Cube cheese and add. Then add half and half. Simmer until cheese is melted and all is well blended.
It is so good you'll want seconds. This make a lot so you might want to half the recipe. I freeze some so that we have a quick meal if needed.
