I bought a big old butternut squash, and instead of drooling over the millions of recipes I have starred on my google reader, please recommend to me your favorite, or top 2 favorite, recipes with squash.
Thank you, my healthy cooking guru.
Re: Tasha
You are funny! Probably my most favorite ever butternut recipe was http://tashaandsage.blogspot.com/2010/03/warm-butternut-and-chickpea-salad-with.html I don't know if you have tahini, if not it is worth buying for this recipe!
I love it just cubed and roasted with a little olive oil & salt and pepper or roasted and mashed as a side, tossed on a salad (especially love it with gorgonzola!), paired with black beans (and lime & cilantro, as a salad or even something like a quesadillas) or in soups. If your squash is huge you could probably make more than one recipe out of it.
I haven't tried this soup yet, but everything I've made from Cara's blog is awesome http://carascravings.blogspot.com/2011/01/spicy-squash-peanut-soup.html#more and not only does it have squash but it also has peanut butter! I just realized I have everything for it and now I'm wishing I'd made that for dinner!
You could also make this http://tashaandsage.blogspot.com/2009/12/sweet-potato-lentil-stew.html soup and use the butternut instead of sweet potatoes.
I DO have tahini...you never know when you are going to need to make some hummus!
And that soup sounds great too....I am going to see how much I get out of the squash, hopefully I can get 2 recipes worth out of it. It's pretty big (that's what she said)....I figure if I am going to take the time to cube it, I might as well make it worth it.
Thanks:)
