What's for Dinner...this week
What is everyone having for dinner this week...I am looking for inspiration. I need to go to the grocery store after work today.
I am planning on doing a pizza at home one night. We have salmon, talapia, chicken, steaks....I am tired of the same old stuff!
Re: What's for Dinner...this week
AMEN. I need to make it a point to actually cook at home. DH and I always just go out to eat instead. Brea posted a salmon recipe on the accountability thread.
I make a meatloaf that DH loves.
Ground turkey/beef and bread crumbs mixed and put into a loaf on a cooking pan. Mix brown sugar and ketchup and pour on top. I don't have a ratio for the bread crumbs or the sugar and ketchup because my mom sucks and just tells me to eye it. Awesome mom, thanks. So sometimes it comes out better than others haha. But you want the sauce so that it's more brown looking than red. Cook at 350 for about 45 min, but it all depends on how big of a loaf you do. It's anywhere from 45 min to a hour usually for me and I use 2-3 packages of the lean ground turkey. The first time, just cut into it to see if it's done or not.
Then I do veggies and sometype of starch.
We've also experimented and put stuff inside it like slices of ham and cheese, broccoli and cheese, etc. So you could make it all different ways and have variety!
There's More To Life Than Lists (blog)
Tonight I'm making panko crusted Chicken breasts with a lemon basil sauce and some jasmine rice.
As for the rest of the week, here is what I have so far:
-meatballs & bowtie pasta
-shrimp & sausage k-bobs
-chicken alfredo pizza
We're extremely boring when it comes to dinner lol... Tonight will be grilled chicken with veggies. We usually just do chicken or steak with starch and veggies, I'm trying to keep away from carbs this week though so my dress will be more comfortable Friday... Sometimes we'll do ground turkey tacos instead of hamburger.
We use different McCormick grill spices to change the flavor around... We need to get a cook book and change it up!
Maybe we should start a cook book on here?!

It's actually from allrecipes.com
http://allrecipes.com/recipe/baked-garlic-parmesan-chicken/detail.aspx
I used crushed up ritz crackers (whole wheat or regular, both work!) instead of bread crumbs. It adds a lot of flavor.

I lways cook the same things also. Maybe I will try the garlic chix parm. one night. I love to cook but need to get more creative. I think its because what I cook I don't need recipes for and I just wing it. Cooking from recipes sometimes seems so time consuming for me.
