1. Would shredding a rotisserie chicken from Shop Rite work okay?
2. What do you serve to dip with? I'm also making a hot spinach dip with tortilla chips, so anything besides those.

I do this all the time, I dont like canned chicken. I have even used their grilled chicken. I also throw it in my mini chopper to save time and its great
I dip scoops, celery, frito scoops
there are a million variations. this is what i do...
heat 2 cups shredded chicken with 1 cup franks hot sauce.
once heated through add 2 -8ounce blocks of cream cheese until melted.
then add 1 cup of either ranch or blue cheese dressing.
serve warm.

i NEVER used canned chicken for that recipe. rotissere will be GREAT. i usually just take a few breasts and boil them and then shred it. so much better

I usually use tostitos and celery...you could pretty much use any cracker or chip you want...personal preference.
