I plan to serve:
Drinks: sweet tea, mint juleps, bourbon, beer, wine
Menu: cucumber sandwiches, Shrimp Dip, Burgers, hot dogs, Mint Julep Cupcakes
Am I missing anything? maybe a side dish?

Is the party just to watch the running or is it for a meal? I don't know that the cucumber sandwiches go with the burgers and dogs. If it's just a party to watch the running I'd do the cucumber sandwiches and add some other appetizer type fare. If you want this as a meal, keep the burgers and dogs, dump the sandwiches but add some side dishes.

If you are trying for a meal, you always want to remember to serve a square meal. Yep, that old fashioned idea of protein, veggie, veggie, starch is always a good planning backbone.
If you want appetizers, a variety of dips and more hearty fare, at hot, cold, and room temperatures, is the way to go.
Just let us know and we'll give you some ideas.

I'm thinking more of a meal:
I'll add the non-alcoholic drinks, toss the cucumber sandwiches and add more sides
How about the following?
Apps: shrimp dip with crackers, veggie platter with dip and deviled eggs
main: grilled hot dogs, hamburgers, veggie kabobs
sides: Do y'all think Quiche would work? maybe biscuits, a potato salad or orzo shrimp salad?
Dessert: derby pie, mint julep cupcakes
I don't think of quiche as a side same with shrimp orzo salad (although it sounds really good and would like a recipe).
For sides I'd do the potato salad and either a rice or a pasta salad. I like the rest of the menu though.
I wouldn't serve shrimp twice in one meal, but yes, I like this much better. Really like the addition of deviled eggs.
This pasta salad is great for warm weather and is a little dressier than usual versions. Buy broccoli florets already cut up - took me ages to chop up all those little stupid things the first time.
Maybe do a salad.
I love quiche, but I think it's a bit odd beside hamburgers and hot dogs.

I never really like to do plain-old BBQ fare, but those dishes look good.
The shrimp orzo salad is my fave for summer parties, but I agree, shrimp 2 times in a menu won't work.
