Cake question...please help

We will be having my LO's birthday party out of town (6 hour drive) and I wanted to make his cake.  I was going to do it in the shape of the number 1 with two layers.  I would have to shape the cake and do a crumb coat before icing and decorating.  I was really hoping to bake the cake in advance but I also wanted the cake to be as moist and fresh as possible.  We will be leaving on a Thursday and the party is on a Sunday. 

Should I bake the layers a couple of days in advance, wrap airtight and cut, crumb coat and do the icing the night before the party

Or

Can I bake, cut, crumb coat, and wrap airtight that far in advance?

    I guess I could but I typically don't like baking with someone else's oven.  I know mine and if it's heating to the right temp etc.

  • You can bake it anytime, wrap and freeze it (but I would not crumb coat before freezing - maybe you can, but I don't have experience with that). Frost the day before the party.
  • Crumb coating will help keep cake moist. You can crumb coat it and get your coat really cold by placing it in the fridge. If you want.. put it in the freezer  for about 10 minutes after that. Take out and wrap good. Then you can place back in freezer.

    Do not unwrap with the cake thawed you will have to have the cake really cold or frozen. But it really doesn't matter as it is just the crumb coat and you can resmooth it once you unwrap.

  • You can also make a flavored simple syrup and brush the cake before you assemble it.

    This. They can be baked and freeze up to 2 months in advance, and frost the day before.
