Need a vegetarian menu

I'd like to have our newest neighbors over for dinner soon. They're our age and have been very friendly and we've talked about getting together for dinner. I know that they are vegetarian so I'm not sure what to make. Any good ideas for menu?

     I made this menu when we were having DH's friend and vegetarian GF over for dinner. It was really good, and even DH and his friend, who are total carnivores, didn't miss the meat. It didn't feel like we were compromising and accommodating, it just felt like a really good meal.

    This is PERFECT! I think I'll have to make that asparagus tart, the mushroom bourguinon & try those macaroons. I had been thinking of something with mushrooms for the main course but couldn't think of what. Oh, and we just got a TJs here in my city and I haven't been yet so I'll add those adorable macaroons to my shopping list. Thanks!!!
  • I highly recommend getting a good pasta too. TJ's has an egg papperdelle that is perfect.

    Are you having a more formal or more casual get together?

    I have the opposite problem: me & DH are vegetarians/pescetarians and neighbors are foodie meat eaters, but, we do dinner often. 

    Some of our faves have been more buffet/ build your own style dinners:

    -tacos

    -Falafels

    You could always go traditional and do a veggie lasagna = always a crowd pleaser

  • You can find lots of good vegetarian options with italian food. Just don't use meat sauces and you'll be great. Eggplant parm. is good option too.

     

     

  • Thanks for all the suggestions!  I'll keep them handy because we just haven't been able to pin down a date that works for both couples.
