Izzy, this is mainly for you, but I figured I would throw it out for everyone just in case anyone else could help me!
I am looking for recs of (somewhat affordable) hotels in Spain. We are planning on staying over in Seville and Barcelona (with day trips to Granada and Toledo). I am open to a more expensive/nicer hotel in Seville since we will be there for our 1 year anniversary and want to stay somewhere nice.

I'm so jealous that you're going to Spain! Would it be less romantic if I tagged along?
Out of those cities, we only stayed in Seville and it was our favorite place! Our hotel was really really nice and I would stay there again if we went to Seville. It's right in the middle of everything and within walking distance to all of the big sights. We stayed at the Hotel Alminar http://195.219.190.10/$sitepreview/hotelalminar.com/codigo/inicio.asp
I thought the prices were pretty reasonable and the accomodations were really nice and updated. Our room had a view of the Catedral and the beds were actually comfortable, which is a rarity. It's a small hotel with only about 12 or so rooms. The front desk people were also really nice with giving us tips on where to eat and what to see. Definitely go to Coloniales!!! That was our favorite tapas place and you can ask the front desk about it and they'll give you a map. I'll have to get a list of all the good places we ate before you go. We ate breakfast at the hotel every morning and I think it was something like 7Euros each. They have cereal, fruit cocktail, juice, soda, breads and lunchmeat/cheese, whole fruit and yogurt.
We took a train from Cadiz to Seville, so when we got to the train station we just found a taxi and told him the name of the hotel and the address. It's really helpful to have a post it or sheet of paper that you can just hand to the taxi driver with that info on it. The taxi driver pulled into this alley and just kind of let us out because he couldn't drive his car down the narrow street. We had to walk a little bit to get to the hotel, but it wasn't too far. The only downfall of the hotel was that we could hear the cathedral bells, but they didn't start until 9am.
Talking about all of this makes me want to go back there!!! I'm extremely jealous! You and Alex are going to have an amazing time...
A colleague of mine has took his vacation in Spain recently with his wife and has been to both cities. He said he'd email me the information later. He's quite the world traveler. When I get the info from him I'll forward it to you in email.

Does anyone have any experience with hostels? My H suggested them and I say "no way" initially, but after some research, it seems as though they might be not that bad if we find the right one--especially on days that we will be sightseeing and will basically just need a bed to sleep in.
