Re: Heya ladies. Please share your BEST icing for some yummy Vday sugar cookies.
This icing turned out great:
The Best Rolled Sugar Cookies
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract (I used 1 1/2 teaspoons of mexican vanilla)
5 cups all purpose flour (I used 4 1/2 cups)
2 teaspoons baking powder
1 teaspoon salt
Directions: In a large bowl, cream together butter, and sugar until smooth. Beat in eggs and vanilla. Stir in flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). I put mine in the freezer for 30 minutes, and it worked great. Preheat oven to 400 degrees. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter (I don't have a heart, so I used a round cutter). Place cookies 1 inch apart on ungreased cookie sheets. Bake 6-8 minutes in preheated oven. Cool Completely. The original recipe says it makes 60 cookies, but I wanted mine a little bigger (I ended up with 36). I cooked them a little longer (10-12 minutes).
Sugar Cookie Frosting (also courtesy of All recipes)
http://allrecipes.com/Recipe/Sugar-Cookie-Frosting/Detail.aspx
4 cups confectioners sugar
1/2 cup shortening
5 tablespoons milk
1 teaspoon vanilla
food coloring
Directions:
In a large bowl, cream together the confectioners sugar and shortening until smooth. Gradually mix in the milk and vanilla with an electric mixer until smooth and stiff, about five minutes. Color with food coloring if desired. I added red food coloring to make my pink frosting. I also topped these off with a few sprinkles.
