What's cooking this week?

We've been eating horribly lately, mostly because we've been so busy with random events on weeknights.  Neither one of us really like leftovers.  And I am desperate in need of grocery shopping. 

What do you have going on in your kitchens?

So far:
Mon - meatloaf, roasted potatoes, zucchini
Tues - salmon, brown rice and quinoa, veggie TBD.

That's all I've got so far.

  • We leave for vacation on Friday night, so I am trying to make meals out of what we have to use up so that nothing goes bad/goes to waste. 

    Tonight is chicken marinated in Asian Ginger dressing with rice and corn and broccoli.

    Tomorrow there is a good chance we will eat with my parents, since we just got word that someone wants to get in to see our house at 5pm (figures, the one day all flipping summer I get day work I can't be at home at night...lol)...if we don't end up eating there I am thinking use up some leftover spaghetti in meat sauce.

    Wednesday and Thursday are up in the air, but will be simple things that don't yield leftovers.  My boss mentioned ordering out on her as a thank you for helping out with something beyond my regular job duties- so that may take care of one night this week (she wants to extend the thanks to DH and the kids too, which is so generous).

    Friday we head down the shore as soon as I'm done work- so probably some type of junk on the road, or maybe I can eat a later lunch and we can grab something semi-decent once down there.

  • I have been throwing myself into menu planning lately. Not sure what's spurred this bout of domesticity!

    Sunday: made chicken parm meatballs, specifically the ones that have been floating around Pinterest. They. We're. Awesome.

    Monday: summer corn chowder. Also amazing.

    Tuesday: cheesy chicken sausage penne bake. I actually prepped this one tonight so I'm not stuck in the kitchen all evening.

    Wednesday: leftovers

    Thursday: chicken piccata, peas and roasted carrots

    Friday: I'm heading to the phillies game with my fam. DH and the kid will be having leftovers.

    Saturday: DH has his fantasy football draft. I'm going out to lunch with my parents so we'll probably have a light dinner. I'm thinking chicken Caesar salad.
  • I still don't have a kitchen, so J & I continue to go out for dinner every single night.  I'm pretty sure our weight is going to double and we may be claiming bankruptcy before this project is over!

  • Meal planning is incredibly difficult for me. A friend told me about emeal.com and when a groupon came up I signed up. I don't LOVE it, but I really like. I can't out in our food preferences or allergies, which stinks, but they have about a dozen different type of menu options available. It also recycles ingredients so you aren't buying a jar of pesto and using two tsps and then it goes bad, it will use pesto in another recipe that week or the next. It prints out a shopping list for you so you can just take that in and know how much of what you need. So yeah I've planned last week and this week for us and I'm really happy so far.

  • Monday- Pasta with meatballs/sausage and a salad

     

    Tuesday- Hot Roast Beef Sandwiches with a salad and corn on the cob

     

    Wednesday- Out for dinner

    Thursday- Steaks, potatoes, and a vegetable

    Friday/Saturday/Sunday- We will be away
