Crockpot and Freezer Meals

Please share your simple yet delicious recipes here!

So for more info...I love one pot crockpot meals or add something simple like put it on rice or pasta. And almost everything I try to freeze turns out mushy and gross. I have had success freezing spaghetti sauce but that is it.

    I have made roast beef (put carrots, onion, potatoes, celery, and a little chicken stock) that is a good meal.

     Also crock pot fajitas are the bomb.
    1lb chicken breast, 1 onion sliced, 2 bell peppers, and fajita seasoning.

    I will add recipe links when I get on the computer in a bit. Mobile nesting now haha. I love crock pot meals, haven't really tried to freeze them though.

  • Ooh the fajitas sound awesome! Right now I mainly make beef and pork roasts in the crock pot.

    I've never frozen a crock pot meal, but I LOVE these books...

    They not only have great recipes, but they also give you the exact measurements for cooking the recipe x3, x6, x9.  Love these!

  • Awesome I need more cookbooks! But don't tell DH I said that...he thinks the 20 or so I already have are enough! But these cookbooks are from pre baby so they aren't quick and easy family meals!

  • I froze a whole bunch of meals and am so glad I did! I froze stuffed peppers, meatballs, pulled pork and a taco soup.

  • H calls it yummy chicken..

    4 boneless chicken breasts, 2 cans cream of whatever you have, 1 packet zesty Italian dressing, 1/2 a block of cream cheese... Put it on low for 6 hours!

    Serve over spiral pasta!

    Pulled Pork

    Pork roast, 1 bottle of BBQ sauce (I use Sweet Baby Ray's), cook on low all day - shred and enjoy on rolls!

    Tater Tot Casserole
    1 pound chicken tenders
    1 jar bacon bits
    1 bag shredded cheddar
    1 bag tater tots

    Layer all the ingredients (tatertots, chicken, cheese and bacon) several times, cook on high for 4 hours

  • Good freezer meals are chili, white chicken chili, lasagna, Bbq sauce (for ribs, Pulled pork or chicken) spaghetti sauce.

    @ashleymatt1215 You posted the tater tot casserole on a post called Meal Plans a few weeks ago and I made it last week. DH LOVED it, so thank you! :)

    Now I am anxious to try the Yummy Chicken.

  • Chills freeze well.

    I also make shredded chicken in the crock pot and freeze. Many recipes call for cooked chicken so it's a time saver to have it already cooked. You could also do this with taco meat.

    Pulled pork freezes well and you can use in tacos, sandwiches, etc.

    Lasagna

    Spaghetti sauce & meatballs

    Skinnytaste.com has a freezer meal section if you want healthy stuff.

  • For crockpot meals, I am in love with Table for Two's beef with broccoli and Skinnytaste's sesame chicken. Totally hits the spot for my Chinese cravings, and healthier, too!

    In addition, chicken taco chili is awesome and makes a ton (seriously), sloppy joes, pot roast, and pulled pork come to mind.

  • I just saw a recipe for pasta fagioli. You know like the one they make at Olive Garden!

    Pasta Fagioli slow cooker crock pot version... just like Olive Garden


    2 lbs ground beef
    1 onion, chopped
    3 carrots, chopped
    4 stalks celery, chopped
    2 (28 ounce) cans diced tomatoes, undrained...
    1 (16 ounce) can red kidney beans, drained
    1 (16 ounce) can white kidney beans, drained
    3 (10 ounce) cans beef stock
    3 teaspoons oregano
    2 teaspoons pepper
    5 teaspoons parsley
    1 teaspoon Tabasco sauce (optional)
    1 (20 ounce) jar spaghetti sauce
    8 ounces pasta
    Directions:

    1
    Brown beef in a skillet.

    Drain fat from beef and add to crock pot with everything except pasta.

    Cook on low 7-8 hours or high 4-5 hours.

    During last 30 min on high or 1 hour on low, add pasta.
