QOTW-What is your go to easy night meal if you don't do takeout?

Usually pasta in some form, I make my own sauce so we always have it on hand. Sometimes I'll throw together pizza if I have a Pilsbury crust in the fridge.

  • Spicy sausage pasta w/ fresh spinach
General Tso's chicken, roasted broccoli, rice
EB lasagna cupcakes, garlic bread, salads
    Homemade spaghettios and BLTs
Creamy tomato tortellini soup w/grilled cheese sandwiches
    Quicker chicken & dumplings

The General Tso's is new. I am excited for it. I'm also making my own garlic knots for the first time.

I keep some frozen pizzas, macaroni & cheese and nuggets or fish sticks around for something if I don't feel like cooking and we can't swing take out. Usually we have gift cards around so we can do take out.

  • I have no plan for this week like at all :/ I will try to figure it out tomorrow because I have too much to do today!

Our go to quick meal is either chicken nuggets and french fries or grilled cheese and tomato soup. Dd loves them both so we have been having them more often than I would like to.

  • In no particular order:

Stuffed pepper casserole (same as stuffed peppers but deconstructed in a casserole)
Fried egg sandwiches on everything bagels with a side of turkey bacon
Southern style seasoned chicken breasts, old bay fries, and collard greens
Steaks on the grill, twice baked potatoes, and green beans
Garden vegetable soup (we have lots of squash and tomatoes to use up) and grilled cheese
    Leftovers

  • Leftover's at least twice. Ribs one night. And hopefully DH will cook the other two nights too.

DS always presents a challenge with is dairy allergy. No butter, no cream, no cheese.. so if we have anything with any of those in it I have to figure something else out for him.

  • @ream02 that must be difficult...do you have go to meals for the whole family without dairy? Do you have little meals for him that you can whip up quickly so you guys can still have certain meals? I know I have Gerber toddler meals in the pantry just in case we have a fend for yourself night or we eat something like chili or spicy stuff which she doesn't really eat.

  • I finally got some meals figured out for the week! We will have spaghetti sometime this week since I am thawing some sauce in the fridge. I am also going to make my meatloaf...DH is super excited. I am thinking a chicken fried rice one night. I have some frozen turkey meatballs in the freezer that we didn't really care for so maybe I can make those into a casserolle. Good thing we are going grocery shopping next week. We have plenty of food but we are missing some of the things that bring our meals together.

I have some homemade soup for him frozen in cubes. So if we have something spicy or with dairy he has that with some whole grain mixed with applesauce and something else. Or he'll have natural white meat chicken nuggets with something to go with. He's pretty pick on textures. He will wants the baby cereals mixed with applesauce or other pureed fruit and will point for it. He doesn't like real oatmeal texture. He literally gags. But he gets some of his texture things from mommy.

  • Ugh LO won't eat whole grain breads just like me...I can't handle the texture and it seems like that is her problem too! She loves oatmeal though. She hated it when I mixed rice cereal into her purees. Silly kids.
