Crockpot recipe...

Anyone have a good one? What's your favorite crock pot meal? I want to try a new recipe for dinner tonight but can't find anything that looks good. I'm leaning towards chicken of some sort, but can do whatever.

Re: Crockpot recipe...

  • Usually for the crock pot I do beef tips and rice or a roast of some sort.
  • Salsa chicken is my favorite in the crock pot. It's just some chicken breast and salsa. I also throw in black and pinto beans. When its done, I melt cheese on top and put it over rice.

  • One of my favorites is a whole chicken, season it with whatever spices you want and pour a can/bottle of beer over it. If you want a crispy skin, line the crock pot with foil (because the chicken will be fall off the bone tender) and stick it under the broiler when it's done cooking.

Skinnytaste Crock Pot Sante Fe Chicken is another favorite. I like it because it makes a lot. We'll have it one night over rice, and then I'll make the leftovers into burritos and freeze them for a quick lunch or dinner another time.

  • OH a super super simple and yummy one is putting like 3 frozen chicken breasts in the crock pot (its enough for two people and some left overs) and add a can of cream of chicken and a can of campbells chedder. I add salt pepper frozen broccoli and some garlic powder to taste. Let it cook all day and the chicken literally falls apart. And then make like two cups of white rice on the stove when your ready to eat and put rice in a bowl and then the chicken stuff on top. SO good and so easy .

I make something similar to this but with the broccoli and instead of the crockpot I do it on the stove. It takes like 20 min to make but it is really good.
  • We actually are making Chili in the crock pot tomorrow, but corned beef and cabbage is a favorite.

And crock pot Apple crisp :)
