PW- pork chops?

Anyone have a good recipe for pork chops? I have some layed out, but don't know what to do with them. Most likely we will be grilling them, but any ideas are welcome!

  • DH makes this AWESOME date sauce/puree to put on pork chops. He changes it every time... sometimes he soaks the dates first and blends them up before cooking them.  Sometimes he just chops them up and puts them in the saucepan with onions and spices until they kind of melt.  It's always tasty, no matter how he does it.

  • One of my fav simple ones is Maple-Mustard Pork Chops. 

    Just mix 2 parts maple syrup to 1 part dijon mustard. Add salt and pepper to taste. I usually will marinate it for a couple hours and reserve some maple-mustard on the side to put on after grilling for extra saucy-ness. Delish. 

    Subbing in different mustards or different sweeteners works too. Like Honey and Champagne Mustard. Or Agave and a spicy mustard, 

    I'm not a big mustard fan, but for some reason love these combos!

  • I always season with Emeril's Essence seasoning.  You don't have to buy, you can find the recipe online and use seasonings you already have. Rub that all over both sides of the chop. Then we take the fatty end of the chop and place fennel seeds on it.  Grill.  Yum!

  • I love them grilled with just a bit of salt and pepper and then serve with a fig compote.

    The key is to not over cook them I think.  Otherwise they get dry.  I am a risk taker though, so I am willing to serve them a tad pink.
