What's cooking?

Hopefully we can throw stuff out there to help Jamie!

Sunday: garlic fennel pork tender loin (thanks Wegman's!) in the crock pot, mashed potatoes and collard greens with bacon

Monday: leftovers

Tuesday: my go to meal lately: chicken sausage and peppers in the crock pot.  What can I say?  Everybody likes it!

Wednesday: leftovers

Thursday: chicken marsala per the hubs' request, sides tbd

Friday: not sure

Saturday: The hubs has plans so the kid and I are on our own. Maybe quesadillas or something.

Side note: I had this amazing salad from Wegman's last week with a salsa ranch dressing that I decided to recreate.  I took 6oz of greek yogurt, half a jar of salsa and a ranch dressing packet and threw it in the food processor.  OMG its SO GOOD.

  • I have no freaking idea what I'm making this week.  I was away all weekend and was too exhausted to meal plan last night.

  • Aww thanks Jess!  I will take any and all ideas!  I need to dig up the full list and maybe try to scan it and post or something to see if any experts here can help me! Between that and the call on Saturday from the doc that DS is iron-deficient, I am ready to pull my hair out when thinking about food!

    Tonight, we are having soups- my dad made me a batch of a sausage and spinach in a cream sauce type soup- kind of like the one at the Olive Garden- so I'm finishing that and DH and DD will have chicken noodle. My dad also sent me over some breaded eggplant with some mozzarella and a can of tomato sauce (for me)...might make that up too.

    We have eggs to use, and some chicken...have to figure out what the heck I'm doing with the rest of the week.  

    Serious question- and probably ridiculous- does chicken sausage have any type of beef/meat in it other than chicken?  Sorry to be dumb, but I've never used it or eaten it and am wondering if it might be something else we can work with in our small food rotation.

    Also, Jess, do you have an easy chicken marsala recipe?  DH can have it- but not the mushrooms, but he ordered chicken marsala while out to eat last week and just picked the mushroom chunks out and was fine.

  • Jamie this is my favorite recipe and it doesn't even have mushrooms in it! I usually add them but obvs you wouldn't.

  • @jamiedoll - how are you guys doing with meals?  adjusting okay?

    Monday - we had mango coconut salmon (pre-marinated frozen from WF), garlic brown rice and quinoa, roasted broccoli

    Tues - turkey kielbasa with BBQ sauce, mac and cheese, and veg TBD

    Weds - rotisserie chicken, mash, veg

    Thurs - shrimp pad thai with edamame

    Friday - filet roast, potato gratin, roasted veggies, salad (my parents and sibs are coming over for my rents' anniversary)

    Tracy- we are doing OK- but I haven't done anything great with meals yet.  I've fallen back on some salmon we had in the freezer, BBQ chicken (but he can't have BBQ sauce...grr), and things like eggs and chicken noodle soup.  Tonight we are having eggplant my dad made up for me that I just have to fry up and then add some mozzarella (and maybe some sauce for me).  I just need to really find some creative options (I know seafood is always an option but it's usually much pricier, so I want to not fall back on that too too much) so that it's not like 'hey!  plain chicken again! whoo!'

  • @jamiedoll01: regarding your husband's allergies--I suggest you start to look at recipes that are based upon the "Paleo diet."  You will not find gluten, sugars or high fructose corn syrup in any of these recipes.  The hardest part is that HFCS (or derivatives of HFCS) is in pretty much all packaged foods.

    With regards to your DS's iron deficiency, here's a good list of foods to boost iron levels:
    • Meat - especially red meat (such as beef or liver)
    • Chicken
    • Turkey
    • Pork
    • Fish
    • Shellfish
    Non-meat foods:
    • Spinach and other dark green leafy vegetables (kale, chard, collards, etc.)
    • Tofu
    • Peas; lentils; white, red, and baked beans; soybeans; and chickpeas
    • Dried fruits, such as prunes, raisins, and apricots
    • Prune juice
    • Iron-fortified cereals and breads.
    A great resource for recipes is the NY Times "Recipes for Health" page.
  • Thanks Erbur!  DS is being a stinker with this all- I have been trying to boost how much meat I give him especially, and he chews and moistens it, then starts choking on it and spits it out.  It's so hard I guess because he only has 5 teeth :(
