Sunday: garlic fennel pork tender loin (thanks Wegman's!) in the crock pot, mashed potatoes and collard greens with bacon
Monday: leftovers
Tuesday: my go to meal lately: chicken sausage and peppers in the crock pot. What can I say? Everybody likes it!
Wednesday: leftovers
Thursday: chicken marsala per the hubs' request, sides tbd
Friday: not sure
Saturday: The hubs has plans so the kid and I are on our own. Maybe quesadillas or something.
Side note: I had this amazing salad from Wegman's last week with a salsa ranch dressing that I decided to recreate. I took 6oz of greek yogurt, half a jar of salsa and a ranch dressing packet and threw it in the food processor. OMG its SO GOOD.

With regards to your DS's iron deficiency, here's a good list of foods to boost iron levels:
- Meat - especially red meat (such as beef or liver)
- Chicken
- Turkey
- Pork
- Fish
- Shellfish
Non-meat foods:- Spinach and other dark green leafy vegetables (kale, chard, collards, etc.)
- Tofu
- Peas; lentils; white, red, and baked beans; soybeans; and chickpeas
- Dried fruits, such as prunes, raisins, and apricots
- Prune juice
- Iron-fortified cereals and breads.
