    We had a ton of leftover BBQ pulled pork, so I made a tater tot casserole with that, inspired by http://www.bunsinmyoven.com/2013/08/19/sloppy-joe-tater-tot-casserole-2/ but tweaked to use the pork and be BBQ-themed. It was wonderful. And also bad for us. :)

    H is out tonight. I went to the store and bought pizza rolls and Diet Root Beer for dinner. I treat myself when I'm on my own. :)

    We were semi healthy. I made tortellini with baked kale and baked sweet potatoes (on the side obv). Dh didn't eat any vegetables whilst saying "yeah, I need to eat more vegetables". Lol

    DH made linguine with tiger shrimp (they were huge!) sauteed in olive oil, butter, lemon juice, garlic, basil, and oregano. It was delicious!

    I made a new recipe called Chicken Enchilada Casserole. It was pretty good. I have 3/4 of a pan leftover because DH was gone until late last night helping someone from our church. We're going to eat some of it for dinner tonight I think. I bet DH probably won't like it because it called for green chilis and he doesn't like peppers. We'll see....
