What are you making this week? Here is mine: 
 Sunday - Greek roasted chicken & potatoes
 Monday - spicy turkey mini meat loaves with sweet potatoes and broccoli
 Tuesday- Mediterranean salmon salad
 Wednesday - ground lamb and hummus pita pizzas with tomato, sweet onion & parsley salad 
Thursday - roast chicken with balsamic bell peppers & mascarpone mashed potatoes
 Friday - black-eyed pea cakes with adobo cream & rice with a side of tomato salad

  • Tonight will be curry chicken with peas and potatoes.  Tomorrow will probably be something with salmon.  Wednesday is on my own, which likely ends up being eggs or something, Thursday we'll hit the store, Friday who knows.

  • @Booney, I'm coming over on T hursday.  You had me at mascarpone mashed potatoes.

    Sunday: Chicken Orzo Basil Soup
    Monday: Brown Sugar Balsamic Glazed Pork Loin--um this was freakin delicious and it was a crockpot recipe.  This will be going into our regular rotation. :)
    Tuesday:Soy-Ginger Chicken (crockpot)
    Wednesday: Breakfast for dinner! Bacon and Egg McMuffins with tater tots
    Thursday: Tampiqueno Steak with Rajas, Corn and Mexican Squash
    Friday: Rosemary Roasted Chicken with Parsnips and Carrots
    Saturday: IDK yet!

    Monday: We had Shepherd's Pie (really cottage pie, but everyone calls it shepherd's pie) and a salad and pumpkin pie for dessert

    Tuesday : Butternut squash lasagna

    Wednesday : Pumpkin chili

    Thursday : Orange Maple glazed chicken with asparagus

    Friday : Tapioca Flour pizza

    Saturday : coconut curry chicken

    Sunday : sweet potato crusted fish

  • I'm on my own this week and haven't given it a whole lot of thought.
    Mon- left over corned beef from Sunday.
    Tues- bacon and pancakes!
    Wed- sausage and pasta
    Thurs- something with ground beef ...
    Fri- More sausage probably
    Sat- Back bacon roast with some kind of veggie
  • Last night was spaghetti (homemade sauce y'all!)
    Tonight was pizza because we're lazy on Mondays.
    Tues- Grilled marinated pork chops with steamed broccoli and carrots.
    Wed- Probably something quick or fast food. I have a midterm until 9 pm. Or maybe something in the crock pot.
    Thurs- BBQ chicken and veggies
    Fri- Chili beans and cornbread 
    Sat- Dinner at MIL's house and carving pumpkins! :D She says she is making a surprise, but I'll probably bring a nice salad or Fall dessert.

  • I'm still eating alone until Friday...

    M- Avocado chicken salad wrap and fruit
    T- Potato skins
    W- Parmesan crusted chicken and roasted brussels sprouts
    Th- Egg scramble, with roasted broccoli.  I might make some hash browns too and eat leftovers for lunch on Friday.
    F- I was going to do a pesto quesadilla or pesto chicken with some of our basil, but DH is getting home a few days early, so who knows.  Maybe pizza or dinner out.

  • Monday we had leftover pizza and finished up the lentils that had been in the fridge for a week.

    Today I have Crockin' Girls' Angel Chicken in my crock pot for tonight, to serve over pasta with broccoli

    Tomorrow will be leftovers from tonight

    Thursday I'm making a vegetable and ground turkey soup in the crockpot

    Friday will either be more soup or out for dinner somewhere.
  • I really wish I could get better at menu planning..

    Sunday - Steak Enchiladas and Mexican rice
    Monday - Grilled Cheeses (Spinach artichoke dip, muenster, pickles, tomatoes) and broccoli salad
    Tuesday - Mediterranean Naan Pizzas
    Wednesday - Something very quick - we have a contractor coming to look at our bathroom then I have a meeting.

    Sure. I use Paula Deen's recipe with modifications. I have trouble strictly sticking to a recipe. :)

    I replace the water with 1/2 clam juice and 1/2 chicken stock. I also add a little sugar, Old Bay seasoning, and minced up bacon. Sometimes I throw in a little white wine. I have also used some Duck Commander Cajun Seasoning in it as well, but once I realized it had a MSG in it, I stopped. It is much better to replace the canned stuff and dried herbs with fresh, but this is so much quicker.

  •  Ooo... this sounds like fun (and it's making me hungry).  Making a menu will help kill the takeout habit. Lets see...

    Monday - takeout (chinese)
    Tuesday - Tacos
    Wednesday - Shake & Bake pork chops
    Thursday - Shrimp Scampi over rice
    Friday - Sweet Baby Ray's Crockpot Chicken (I'll probably shred it for sandwiches)

  • Thanks for posting. Work got crazy, and I forgot!

    Last night I made meatloaf, and we had that with left over mac and cheese and carrots

    Tonight I'm doing baked rigatoni with Italian sausage and garlic bread and roasted broccoli

    The rest of the week I have to travel for work, so I'm off the hook, but stuck eating out all the time. Blerg.
