  • Mon: Burgers and tots. My groceries are being delivered tonight, and I needed to Make something quick.
    Tue: Out. I have IRL bookclub, plus I need to work late that night.
    Wed: Out. Wino Wednesday with friends.
    Thurs: Trailer Mac (Mac and Cheese w/ hot dogs and potato chips - another from my mac and cheese cookbook, and my favorite mac at Homeroom.) Veggies on the side.
    Fri: Something healthy to balance out all the crap from the rest of the week.

  • I'm trying a few new recipes this week. They are flexible for days.

    Corn Chowder
    Leek and Mushroom Linguine
    Butternut Squash Risotto.
    Spaghetti and Turkey Meatballs
    Grilled Chicken and Yellow Beans
    Baked Potato Soup

  • Monday: Shepherd's Pie

    Tuesday: Shrimp Quesadillas

    Wednesday: Corn Dog Muffins with either salad or roasted parmesean cauliflower

    Thursday: Chicken Pillows with steamed mixed veggies

    Friday: Who knows? Maybe takeout Chinese?

    Keeping it really easy this week since it is just me & DS until Sunday.

  • Today: I have a barbeque pork roast in the crockpot.  I'll serve with roasted cauliflower

    rest of the week:

    -chicken fajitas

    -shrimp stir fry

    -ham steak

    -turkey breast with mashed potatoes and cranberry sauce

  • I'm making enchiladas from rotisserie chicken again tonight, and we will eat them tomorrow night too.

    We have a baked ziti with eggplant parm in the freezer, and I think that is our other 2-night plan for this week.  We aimed to do as little grocery shopping this weekend as possible.

    Leftovers from a party yesterday and from the crockpot veggie soup I made on Friday for lunches.

    BTW, the Heart Healthy Turkey and Veggie soup from the Crockin Girls website is DELISH.  Next time, I'm going to add beans and leave out the ground turkey and just add some barley at the end instead.  DH and I both agreed it would be better as just a veggie soup.
  • Mon: lemon/pepper chicken, roasted broccoli, corn
    Tues: grilled marinated chicken, mashed sweet potatoes, corn
    Wed: chili beans, cornbread
    Thurs: fried pork chops, rice, gravy, peas
    Fri: won't be home until seven so probably just grilled cheese and tomato soup
    Sat: going to a Halloween party, bringing buffalo chicken dip and pumpkin cookies with cinnamon cream cheese icing

  • Mon - Out. Writer's Group meets at a French bistro. YUM.
    Tues - Veggie chili made with lentils.
    Wed - Leftover chili. Haha.
    Thurs - Mexican lasagna
    Fri - Leftover Mexcian lasagna
    Sat - Shrimp & Corn soup
    Sun - You guessed it...leftover shrimp & corn soup

    Leftovers are common when you only cook for two! : )

  • Sunday - I made Meatball Sub Casserole for the game.  DH had his brother and father over so I needed "guy" food.

    Monday - Mediterranean Chicken Salad Pockets with a side of Cantaloupe and honeydew melon salad (I need something quick so I can get out the door to my turbokick class at the gym).

    Tuesday - Cornmeal-crusted Tilapia with Tomatillo Salsa.  Sides of steamed green beans and Roasted potatoes

    Wednesday - Sweet Onion Pork Ribs (I have book club so I will throw these in the crockpot for DH and stepmonster).

    Thursday - Spice Mustard Shrimp with Orzo salad and Sauteed Zucchini

    Friday - Chicken, Red Grape and Pesto Pizza.

  • M- We're making either burgers or a pizza.  One of our friends is coming over for dinner and beers :)
    T- Baked pesto chicken and brussels sprouts

    R- I haven't decided yet.  It's a late night for me, so possibly fettuccini alfredo with broccoli and some chicken or shrimp that DH can whip up pretty easily.
    F- Chicken tacos
    S- Whatever I don't make tonight or dinner out since we'll probably be with DH's family.

  • Yesterday we had Slow Cooker Tomato Basil Parmesan Soup that I didn't make last week.  It was really good.

    Today is Slow Cooker White Chicken Chili.  It smells so damn good I just want to eat it now.

    Tomorrow/Wednesday - I found some sausages in the freezer so depending on the weather/rain, DH will grill one night and we'll do leftovers the other.

    Thursday - Inlaw dinner

    Friday - I'm going out with my moms' group for Japanese so DH and DD are on their own.

    Saturday - Chili Cookoff at church.  DH is a "celebrity" judge.

    Tonight and tomorrow I will turn the leftover chicken into something-enchiladas or chicken salad or whatever.

    Oh it is.  The texture is perfect.  I mean once you get over the fact that your noodles are orange, you wouldn't know the difference.
