Keeping it really easy this week since it is just me & DS until Sunday.
Today: I have a barbeque pork roast in the crockpot. I'll serve with roasted cauliflower
rest of the week:
-chicken fajitas
-shrimp stir fry
-ham steak
-turkey breast with mashed potatoes and cranberry sauce
We have a baked ziti with eggplant parm in the freezer, and I think that is our other 2-night plan for this week. We aimed to do as little grocery shopping this weekend as possible.
Leftovers from a party yesterday and from the crockpot veggie soup I made on Friday for lunches.
BTW, the Heart Healthy Turkey and Veggie soup from the Crockin Girls website is DELISH. Next time, I'm going to add beans and leave out the ground turkey and just add some barley at the end instead. DH and I both agreed it would be better as just a veggie soup.

Leftovers are common when you only cook for two! : )

I'm lazy this week and am making two big meals so I don't have to do much cooking or worry about DH having to cook. I need to get my act together in the cooking department.

Today is Slow Cooker White Chicken Chili. It smells so damn good I just want to eat it now.
Tomorrow/Wednesday - I found some sausages in the freezer so depending on the weather/rain, DH will grill one night and we'll do leftovers the other.
Thursday - Inlaw dinner
Friday - I'm going out with my moms' group for Japanese so DH and DD are on their own.
Saturday - Chili Cookoff at church. DH is a "celebrity" judge.

Yesterday: i made a 7lb roast chicken, green beans adn potatoes.
Tonight and tomorrow I will turn the leftover chicken into something-enchiladas or chicken salad or whatever.
