What's cooking?

What's happening in your kitchens folks? I'm trying to crockpot it up!

Monday: chicken Marsala, roasted potatoes, veg tbd

Tuesday: pasta, leftover sausage, homemade sauce

Wednesday: crockpot turkey meatloaf, mashed sweet potatoes, peas

Thursday: tbd

Friday: grilled cheese and tomato soup

    I'd like to bust out the crockpot more often on the days I'm in the office so that dinner can just be ready but my problem is I hate crockpot meat. I don't like shredded meat. Anyone have suggestions?

  • Stew! If you get the pre-cubed meat, frozen stew veggie mix and the seasoning mix. Toss it in for 8 hours on low and voila!
  • What about soups, stews and chili?  I just saw one for chicken parm.  And, I did a roast beef recently that didn't come out shredded.

     

    Another thought.....casseroles.  They can be pre-assembled, and toss in your oven.  I think your sister watches the boys.  Maybe she could even toss it in for you!?!?!

     

    BTW....the boys are super cute, and I seriously can not believe how big they are.  Doing good, Kernal and Dude....doing good!

    Not a big stew fan but casseroles are a possibility!

  • This week is going to be quite busy so I really have no clue what's for dinner beyond tonight, which is going to be a throw-together dish.  DH is OOT, so I am making one of the meals he's not crazy about.  We have a leftover piece of poblano/pepperjack chicken sausage, so I am going to chop that up and simmer with fresh spinach and asparagus with a little evoo, red pepper flake, grated locatelli cheese, and garlic.  Will toss with penne.  DD is having penne with veggies and some butter/grated cheese.

  • Tonight is crockpot mac & cheese (thanks Jess!), sweet peas, and biscuits.

    Tomorrow will be chicken- I'll marinate it in Asian Ginger Dressing and we will grill it and have with some veggies.

    Wednesday I am hoping my boss will be kind and let me take a last minute night off to go to DD's soccer- they just notified us they are doing a whole trophy ceremony for the kids- so I am going to ask if I can switch up my schedule so I can go.  If so, we will most likely take her out after, probably to Chick-fil-A, since she's been begging to go there lately.

    Thursday is usually pizza night with my boss, so I'll probably order some sort of white pizza that DH can eat, even if I just get him a small one on the side.

    Friday I'm thinking tilapia.

    Saturday I have to figure out- we are going to PTM's Monster Mash and it starts at 6...so need to figure out what we'll have.  Probably something super easy, like pbj or something.

    Does anybody have a decent vegetarian chili recipe?  DH loves chili, but can't have beef or turkey...trying to find a substitute for him.  Bonus points if I can crock pot it!

    You can "roast" a whole chicken. They come out super juicy, not shredded.
