Menu this week?

Anyone throwing chicken in the crockpot? I'd love to hear what you've got going on.

Last week I made it a goal to cook all week, and I did! I'm out of ideas for this week.

Re: Menu this week?

  • Last week I made a creamy chicken concoction.

3 chicken breasts, 2 cans of cream of mushroom soup and a packet of ranch dressing mix.

    It was delicious!

  • Did you put it over pasta or just ate it like that?

I wish the crockpot wasn't alway 'cream of blah' it does taste good, but the look and texture!

  • @venti29 I think it was over rice, but pasta works too! I've added parsley on occasion for some color.

  • I want to say good job for sticking to your goal last week!

I am having trouble meal planning because we ate still adjusting the budget to DH's new job.

I got a dry marinade thing that is for tacos that I am planning to put in the crockpot with chicken. It has a recipe on the back that I amtrying to follow. We also have BBQ ribs to have this week.

I really don't know what the plan is for the rest of the week. :-S

I am making sugar cookies this week for the Halloween party on Friday and I am so excited. I have barely baked at all since DD was born!

  • My favorite chicken crock pot meal is a full bag of frozen chicken breasts, one bottle of Franks Red Hot sauce and a ranch packet. I add onion and peppers too.

Pulled buffalo chicken sandwiches. I get a tough bakery bread like ciabatta and broil bleu cheese crumbles (for me) and pepper jack (for DH) on top.

I love the one @madeline posted also. And I too steer clear of cream of X crock pot meals.

  • Way to go for sticking to your goal!!! Send that motivation over here.

I think we are having steaks tonight. On the queue for the rest of the week is left over hamburger soup (this will last probably two dinners) and then eating out of the pantry which will include probably tacos and canned soup.

  • That buffalo pulled chicken sounds amazing @TudorRose11!!  I may have to try that one night.  We are in leftover city right now (blech) but we make it a goal to finish those things before making something new.  Other than that, we might do some pasta one night and I've really been in the mood for steaks.  Maybe I'll make those on Wednesday for our anniversary.

  • My favorite chicken crockpot recipe is to take a can of Corn, Black Bean Salsa, and pour it over the chicken breast. Then shred it when you get home and serve it on tortilla shells with your regular taco toppings. Yummy! You could also use regular salsa too, but the CBB is amazing!

This week so far tonight is leftover homemade Chicken Pot Pie. Then the other ideas are toasted ravioli over pasta, maybe roast in the crockpot, and pork chops.

I've been slacking lately, and don't want to cook. Thankfully H has been stepping up and cooking a lot lately.

  • So far I know we're having shredded beef enchiladas with chile verde, chili, and pumpkin and bat shaped cheese ravioli on Halloween.  We also have cheeseburger meatloaves, beef empanadas, pork schnitzel, and pizza I've already made ahead of time in the freezer so maybe one of those.  I'm not good at planning ahead because I never know what I'll have a taste for that day...

  • Also if you're looking for some crock pot options this was posted on my BMB not too long ago and a lot of them sounded really good.  As a disclaimer though, I made the oatmeal and wasn't a fan.  I found it mushy and pretty plain tasting for my liking.

  • @LittleLady77 had a good sounding chicken crock pot recipe she shared once but I don't know where it is..

  • @tudorrose11 that buffalo chicken meal sounds delicious! Right up our alley :) I will just make DD something else since it is probably too spicy for her!

I just looked in our fridge and found the makings for home assembled pizza! Yay I totally forgot it was there! We got salami andppepper on I this time....yum!
