Appt. update and looking for suggestions

I had a regular appointment today which was mostly good. Thyroid levels are good and my GD test came back great. The dr was reviewing my follow up ultrasound an they'd mentioned excess amniotic fluid so she wanted to check.

We did an u/s in the office and she confirmed that I do have an excess of fluid. The most common cause is diabetes, which my labs say I don't have. So now I'm supposed to follow a GD diet for at least the next week to see if that helps with the level. Yahoo.

Now, I need some carb-free or low carb meal and snack ideas from you very clever ladies. Tonight we're having turkey burgers wrapped in lettuce sine I've made them before. That's as far as I've gotten. Help, please!

  • You can do tacos in lettuce wraps. A piece of meat with roasted butternut squash and a veggie. Spaghetti squash instead of regular pasta..I could go on and on. You can do this!! Check Pinterest too.

    Here was my typical day:

    Breakfast (15 carbs): two eggs and one piece of toast

    Morning snack (30 carbs): flavored yogurt, cheese and crackers

    Lunch (45 carbs): unflavored greek yogurt, 2 cups strawberries (eat the yogurt and strawberries together), small bag of chips

    Afternoon snack (15 carbs): carrots and ranch, string cheese, grapes

    Dinner (45 carbs): Grilled ham and cheese, 1 cup tomato soup, cesar salad

    Bedtime snack (15 carbs): BBQ Pork, string cheese, crackers

    I have lots of other ideas if you need more :-)

    As the PP said, tacos was a great dinner (one tortilla, beef, cheese, salsa, lettuce, sour cream). If I was still hungry I could have a taco salad (no tortilla). Or I could have taco salad and some tortilla chips. 

    The important part of the diet was to have high protein items at every meal/snack and to eat high fiber.

  • Since I don't actually have GD she wasn't too concerned with specifics. My guidelines are lean protein, then veggies, then fruits, and minimal carbs. I appreciate the ideas so far. I think I have a good starting point to try to get a handle on this. Our main side dish is usually pasta so I have to think of other things that won't make me sad.
