  • I do most my cooking on the weekends and we eat leftovers, so this "week night" concept is foreign to me haha.  But these I have made mid-week and they are my favorites.  So good!

  • My grandma still makes my whole family dinner on Wednesdays, and every once in a while she makes chicken and dumplings.  No clue what the recipe is, she's 86 so she's probably just got it memorized by now.

  • I'm a big fan of tossing some chopped veggies (usually zucchini, mushrooms, onions, and green peppers) in a casserole dish with a little olive oil and baking them for about an hour.  served in a tortilla wrap with rice and salsa.  easy and delicious. 

    I'm a vegetarian, but a recipe that H likes is:
    brown some ground beef
    add one cup water, one cup rice, one can of corn, and some chili powder and simmer for 20 mins.

  • Since my diet restrictions I have a lot of meals that I just love.  We can't really cook any boxed dinners anymore because I can't have the sodium.  So everything we eat is good because it's home made.  DH is a huge fan of hamburger helper and I've always hated it so I'm really happy I don't have to eat that crap anymore!

    If anyone is interested in low sodium recipes I'll totally share them.  The ones that have turned out the best are:

    Chili, Spaghetti, Chicken Marengo, Jerk Pork, and a Spicy casserole.  These are all under 400mg of sodium per serving.

    I'm with Mana...I do most of the cooking on the weekend because I don't have time to during the week. So, weeknight meals are usually leftovers of my big weekend cook-up.

    The easiest thing to make during the week is tortallini soup:
    Chicken Stock
    Parmesaen cheese rind (my grocery store sells these in little containers for like $2 or a dozen rinds)
    Baby Spinach
    A dollop of tomato paste (I buy the toothpaste-looking tubes so I always have some in the fridge when I need a little bit)
    Tortallini 

    Heat the stock, throw in the rind (it gives it a ton of flavor), squirt in the tomato paste (for color and flavor). When that comes to a boil, remove the rind and add the tortallini to cook in the soup. When that's cooked, wilt in spinach. 

    You could also add in whatever herbs you like, I usually add some pepper and Italian seasoning

  • We usually do grilled chicken, just seasoned with salt and pepper and then sauteed or steamed veggies like carrots, zucchini, broccoli, or corn.  It's fast, simple, and healthy.

    I need to get on a better routine with cooking.  That's by far my worst "chore" to keep up with.  After a long day, the last thing I want to do is cook dinner.  I tried the idea of cooking ahead and reheating, but I hated it because I really don't like leftovers.

  • We love a good rotisserie chicken, usually from costco. With it we'll do rice-a-roni and I've recently become obsessed with mushrooms. I slice them into chunks, sautee some butter and garlic in a pan, add the mushrooms and a little more butter once the garlic is browned. I'll sautee them for a few minutes and then add in some sesame seeds, lower sodium soy sauce, and sesame oil. Sometimes I'll put in onions or asparagus. I think green beans would be good too. Then I put on the lid once I add in the sauces and cook until tender. Looove it!

    We then continue our leftovers by chopping up the chicken, cooking more mushrooms (plain this time), sometimes asparagus, and add a pesto cream sauce (Target!!), serve over bowtie pasta!!

  • It depends on the week.  I am not a meal planner.  I usually plan 2 days at a time.  I can't plan it all on the weekends and cook it all because I change my mind with the change of the wind.

    I am big taco fan.  We eat a lot of chicken cutlets, too.

  • I'm more of a sucker for tacos or pasta. But I may be biased since we had tacos tonight.

  • My favorite is chicken piccatta, it's like my go to meal:

    chicken breast cut in half (so they're really thin, not like two fat little pieces of chicken)

    pound it ( i ues a rolling pin or wine bottle. very fun)

    make mixture of flour, turmeric, onion powder, garlic powder on one shallow pan/dish

    (2c flour, tsp turmeric, tbs onion and garlic powder)

    make mixture of eggs, lemon juice, white wine in another shallow pan

    (3 eggs, tbs lemon and wine)

    Dip chicken in flour, egg, then flour again (it gets messy but comes out better)

    brown on each side in a skillet with olive oil and chopped garlic .

    add chicken broth to cover the chicken breasts

    Add white wine, lemon juice, capers, (2 tbs each for a 10-12 in skillet)

    cover, simmer for 20 min

    flip chicken

    cover, simmer 10-15 more min

    I make egg noodles to go with it and the lemon sauce is so good over them! sometimes i add broccoli too. I have hardly any measurements, sorry I just wing it and add more of stuff i like (mmm capers) you can leave capers out and it's chicken francais.
