I do most my cooking on the weekends and we eat leftovers, so this "week night" concept is foreign to me haha. But these I have made mid-week and they are my favorites. So good!

I'm a vegetarian, but a recipe that H likes is:
brown some ground beef
add one cup water, one cup rice, one can of corn, and some chili powder and simmer for 20 mins.
Since my diet restrictions I have a lot of meals that I just love. We can't really cook any boxed dinners anymore because I can't have the sodium. So everything we eat is good because it's home made. DH is a huge fan of hamburger helper and I've always hated it so I'm really happy I don't have to eat that crap anymore!
If anyone is interested in low sodium recipes I'll totally share them. The ones that have turned out the best are:
Chili, Spaghetti, Chicken Marengo, Jerk Pork, and a Spicy casserole. These are all under 400mg of sodium per serving.

My favorite is chicken piccatta, it's like my go to meal:
chicken breast cut in half (so they're really thin, not like two fat little pieces of chicken)
pound it ( i ues a rolling pin or wine bottle. very fun)
make mixture of flour, turmeric, onion powder, garlic powder on one shallow pan/dish
(2c flour, tsp turmeric, tbs onion and garlic powder)
make mixture of eggs, lemon juice, white wine in another shallow pan
(3 eggs, tbs lemon and wine)
Dip chicken in flour, egg, then flour again (it gets messy but comes out better)
brown on each side in a skillet with olive oil and chopped garlic .
add chicken broth to cover the chicken breasts
Add white wine, lemon juice, capers, (2 tbs each for a 10-12 in skillet)
cover, simmer for 20 min
flip chicken
cover, simmer 10-15 more min
I make egg noodles to go with it and the lemon sauce is so good over them! sometimes i add broccoli too. I have hardly any measurements, sorry I just wing it and add more of stuff i like (mmm capers) you can leave capers out and it's chicken francais.
