I'm helping my mom get her resume cleaned up so she can start looking for a new job. She's miserable where she is.
As for education, should she include this at all at her age? She never got her bachelor's degree in journalism so I think that should come off completely, and she does have her nursing degree. Here's what she provided on the resume:

Wilmington College School of Nursing Newark, Delaware
BS Nursing – Magna Cum Laude May, 1996
Delaware Technical & Community College Stanton, Delaware
Associates Degree Nursing – Cum Laude March 1989
Ohio University School of Communications September 1979 – May 1981
Major Field of Study: Journalism/Public Speaking
Minor Field of Study: French Language/English Literature
Dean’s List student
Should she have it in there at all, or should she only include her work experience at this point? I always thought including your education/degree was only really necessary when you didn't have a lot of work experience to put on your resume (or if you're writing out a full CV like most doctors and lawyers do).

I would keep her education. Depending on her field of interest, it is a valuable asset when comparing resumes...
I would cut out the Deleware T&C since her BS trumps the associates degree.
I would also keep the journalism/public speaking but cut out the minor.
JMO, but I'm not in HR. I know that around here, the more education you have the more you can ask for in $$

That makes sense to me, but I'm not sure it's really all that advantageous to keep college work on your resume when you never finished your degree, you know?

I would leave it on there, but take out the details. I'd probably put the school, the major (maybe) and the dates along with "Some coursework completed". I'd take off the comment about the dean's list.
I also agree with pp that she could take off the associates degree if she's looking to shorten the list, but I don't think it's necessary to remove.
I work in HR staffing and that's my opinion, but to each their own! I review resumes but am not actually doing the hiring so I dunno.

ETA I'm changing my answer.. if she's only looking for something in nursing, then I'd say she could take off the other college stuff. If she's open to other stuff, then I'd leave it on there.

T-TTC since Dec 2008. PCOS/nonexistant cycles(anovulation) and endo. HSG in '10 revealed both tubes blocked. Lap surgery in Dec '10 to correct. Failed Clomid/IUI and injectable(Bravelle)/IUI cycles so far.
