NBR: Quick! Recipe needed for tomorrow

What's your best good, ridiculously easy, can't believe it took so little time to make something so delicious go to recipe?

We're having a potluck tomorrow at work and no one has signed up.  I'm feeling a little guilty and want to help the organizers.  I just don't have the time to make something elaborate or even more than 30 minutes of time tonight.

  • This sounds like a great time to pull out the crockpot. I don't have a specific recommendation off the top of my head but that would be my go to in this situation.

  • Going off the crockpot suggestion...
    Throw 4-6 chicken breasts in, dump a jar of salsa on top.  Heat up and shred.  Serve with tortilla chips.
    Ridiculously easy!

  • I just made pumpkin muffins using a box of spice cake mix and a can of pumpkin puree.  Then I frosted them with canned cream cheese frosting.  Voila.

  • A lady at church always brings a crockpot full of hot dogs. She also supplies a few bags of buns, mustard & ketchup. Lots of people like hot dogs. She barely ever takes any home.

    Salsa rollups- combine 3tbs of salsa per 4oz of softened cream cheese together (I often double the recipe). Spread mix on 6in flour tortillas, sprinkle on a little chili powder, sprinkle on some shreaded mexican cheese. Roll up and cut into 4-5 segment.  Waala! My friends call this stuff crack since it's so tasty and you can't stop eating it.

  • You can make a corn casserole. It's what I brought today and it literally took me five minutes to put together and 30 minutes of baking. 

    1 box of jiffy corn muffin mix
    1 egg
    1 regular size container of sour cream 
    1 can creamed corn
    1 can whole kernel corn. 
    shredded cheddar cheese 

    Mix together all ingredients except cheese. I mix it right in the aluminum lasagna pan I take it in. Cover with cheese. Bake for 30-35 minutes at 350. 

    Done.

    You can always make the Frank's Hot Sauce Buffalo Chicken dip recipe from the back of the bottle.  I do it in the crock pot instead of baking it in the oven.  Super simple.  You could throw it together in the AM and it'll be ready by lunch.  http://www.franksredhot.com/recipes/franks-redhot-buffalo-chicken-dip-RE1242

  • Ha! Well, funny story.  I had asked a friend too and she suggested cookie dough dip.  So I ended up making that.  It was super easy. I've pinned a few of these though, They look awesome.  I love anything in a crockpot too. Now that a bought one that doesn't burn everything!

    HOWEVER, turns out the HR manager made the same thing.  I signed up for it under desserts, and she signed up for it under appetizers.  So, now there's two...

    is it good? it really tastes like cookie dough?
    I think it's good.  I wouldn't say it tastes exactly like cookie dough, but I think it's a good alternative to eating raw eggs on the regular.  It's a reasonable substitution though.
