Heavy apps suggestions

I'm having a big 30th bday party that's Gatsby Roaring 20s theme in March. We were going to get it catered but now that we have to budget for injections, we need to make the food ourselves.

So, I need some suggestions for some heavy apps. So far, we are planning on doing sliced roasted pork loin on baguette chips, meatballs, cheese and meats tray and fruits and veggies tray.  There's going to be a good amount of drinking so definitely need items that can fill people up.  My mom has several chafing dishes to keep food warm, but it'd be great to make items that can be served room temp so they can be done ahead of time.

  • On Christmas Eve I made a jalapeno wonton recipe I found on Facebook. I made about 30 and they were snapped up in less than 5 minutes. Here's the recipe:

    Jalapeno Popper Wontons
    ( I just look for the lowest carb wontons wrappers)
    1 package refrigerated square wonton wrappers
    1 8-ounce package cream cheese, softened
    3 jalapenos, seeds and ribs removed, finely chopped
    1/2 cup shredded cheddar... cheese
    Vegetable oil for frying
    Coarse salt

    1. In a bowl, combine cream cheese, jalapenos, and cheddar cheese. Arrange wontons in a single layer on a baking sheet.

    2. Add 1 teaspoon of the filling to the center of each wonton (don't overfill them). Dip your fingers in a bowl of water and run your wet fingers around all edges of each wonton. Fold the wontons over the filling, pinching the edges to seal to make a triangle and removing any air bubbles.

    3. Fry wontons in batches in hot oil until browned and cripsy. Drain on paper towels and sprinkle with coarse salt. Serve warm.

    I made this sauce to go with them which people also inhaled.

  • The chicken bundles we love are a great heavy app. 1 is a great satisfying snack; 2 has made for a decent dinner for us before!

  • A couple of other suggestions:

    A yummy salad of avocado, tomato, and mozzarella; toss it with a nice light basil & olive oil dressing, and you're good to go (and can make it ahead of time!)

    A Mediterranean layer dip: hummus, diced tomatoes, diced cucumbers, sliced olives, crumbled feta cheese, and then serve with pita chips. The hummus makes it a tad more of a substantial dip.

  • You could do mini chicken salad or tuna salad sandwiches or sliders. I like to do stuffed jalapeño peppers.

  • Ha! I just went to a 20's party last night and we did only apps. It was a good variety and we all had plenty to eat. Here's what we had..

    Smoked sausage (sliced)
    Spicy black bean and corn wontons (Linky - this is the item I made)
    homemade cheeseball and crackers
    some cheesy/garlicy dip that was served on sliced baguette
    pigs in a blanket
    mini cupcakes
    coffee cake
    veggie plate
    pretzel sticks

    and they had a wide variety of beverages. I don't know what though b/c I only do water 

    Have fun! We had a blast at our party!

    T-TTC since Dec 2008. PCOS/nonexistant cycles(anovulation) and endo. HSG in '10 revealed both tubes blocked. Lap surgery in Dec '10 to correct. Failed Clomid/IUI and injectable(Bravelle)/IUI cycles so far.
