Try a New Recipe and Do Something Adventurous
So this months resolution challenge is Try a New Recipe and the quarterly challenge is Do Something Adventurous.

It's supposed to be more like spaghetti sauce than a thick soupy chili since it is served over spaghetti.

It smelled amazing and probably would have turned out okay had I formed it into an actual loaf shape before baking. Since I had a loaf tin, I just poured the meat mixture in. It smelled good, tasted okay but basically crumbled apart into little meat bits when I sliced into it. :-(

I love this recipe blog because it has recipes specifically designed for portions for two. The chicken is very sweet tasting.
2 Tbsp olive oil
1 small onion
2 cloves garlic
1 inch fresh ginger
1½ Tbsp curry powder
8 oz spinach (fresh or frozen)
1 (15 oz.) can tomato sauce
1 (29 oz.) can chickpeas
Instructions
Dice the onion, mince the garlic, and grate the ginger on a small holed cheese grater. Sauté the onion, garlic, and ginger in a large skillet with the olive oil over medium heat until the onions have softened (3-5 minutes).
Add the curry powder and continue to sauté with the onion mixture for one minute more. Add about ¼ cup of water and to the skillet along with the fresh spinach and continue to sauté until the spinach has wilted. The water will help steam and wilt the spinach (no water needed if using frozen spinach).
Drain and rinse the chickpeas. Add them to the skillet along with the tomato sauce. Stir well to distribute the spices in the sauce and heat through (5 minutes). Serve over rice or with bread.
I'm basically trying new recipes everyday. These are the ones that turned out let me know if you want any of the recipes: Orange-burbon pulled pork, Beer-butt Chicken, Teriyaki Sauce and Buffalo Sauce. The buffalo sauce was probably my favorite of them so far, and the hardest part was peeling the peppers and even that was pretty easy, just took time and gloves! DH loved the pulled pork and buffalo wings.
I'm trying all of these now so I can serve them at our superbowl party. It'll be like a Master Chef Heidi showcase! (Ok, master chef is a major exaggeration.)
Whiskey Orange Pulled Pork
Spice Rub:
1 tbsp dark brown sugar (I used regular)
2 tsp ground cumin
2 tsp black pepper
2 tsp smoked paprika (I used regular paprika)
1 1/2 tsp garlic powder
1/4 tsp chili powder
1/4 tsp ground coriander
Pulled Pork:
3lbs boneless pork butt (also called shoulder)
1tbsp vegetable oil
1/4 white onion, thinly sliced
3 garlic cloves
Juice of 2 blood or regulr oranges (I used 1/4 cup of orange juice.)
1 1/2 c. tomato puree (soup or sauce would also work)
1/4 c. whiskey or bourbon
1/4 c. apple cider vinegar
1 tbsp molasses
1 tbsp honey

I made this last night - H has proclaimed it his new favorite. Idk if you guys have bonefish grill restaurants, but it's a bang-bang shrimp knock off... SOOOOOOOOOO good. H even ate his cabbage!
I need some sunshine, I feel Vitamin D deficient. I was thinking Mardi Gras, but pricing and availability are making me second guess that trip. It's hard to justify a $1,500 for 2 nights! DH doesn't get to use his vacation time until June, but I can't wait that long. One day unpaid isn't going to kill us financially, but I need to find an affordable trip.
So I'm thinking I'll find something cheaper if I go somewhere else. I'm thinking just a southern state in a haunted hotel. Is that adventurous enough?
