I'm having a couple of very dear girlfriends over tomorrow night. I haven't seen either of them in a little over a year, and I'm so looking forward to seeing them! We're just hanging out (we might throw on a movie, but I have a feeling we'll do more chatting than watching), and need some stuff to nosh on! 

Fondue has already been determined, I just need to figure out what kind to make. I loooove brie fondue, but it the recipe calls for white wine, and I don't really want to go get a bottle that's largely going to go to waste (since I can't drink it once it's open). Should I just do a cheddar fondue? I can use the lone bottle of oatmeal stout I have sitting in the fridge, and while some will get dumped, it's not like dumping 3/4 of a bottle of wine. Any other fondue recipes you can recommend? (I hate Swiss, so don't recommend anything that uses any type of Swiss cheese, please!) 

With the fondue, we'll have dippables of bread, broccoli/cauliflower, and apples (anything else you might add?) 

I wouldn't make the crust from scratch, but rather find a premade substitute at the store later.

    This fondue uses white wine...1.5 cups.  Do your GF's drink?


    This isn't really fondue, but it is melted cheese with no wine involved.

  • I definitely might do the caprese skewers instead of the bridies or bundles, although, that's more cheese on top of cheese, hahaha.

    That roasted provolone does look good, but I've got a fondue pot, and we're going for traditional fondue style, dipping with skewers and all.

    Finally, the pesto fontina fondue...probably just isn't my thing. I'm not sure. Fontina seems like it would be a little weird with the flavor. Hmmm. Decisions decisions!

  • I went out for fondue the other night and the cheese course was Gruyère and Emmental.  It was really good.  They served it with bread, broccoli, apples and pears.
