Lame attempt to get some traffic going.  I'm down 10 lbs in the last couple of weeks so I'm trying to keep up with meal planning. I think it's instrumental for me.

Sunday: chicken parm "burgers"

Monday: crockpot mango chicken sausage and peppers

Tuesday: lighter chicken parm, steamed garlic dill red potatoes and roasted asparagus

Wednesday: This night is iffy.  It'll be a whatever's in the fridge kind of night.  I'm banking on scrambled eggs since they take 5 minutes, ha.

Thursday: turkey/veggie burgers and mashed sweet potatoes

Friday: pierogies and I'll probably throw some peas in there for something green.

I also made a batch of skinnytaste's beef barley soup for lunches for the week.  I haven't tasted it yet (I will in a few hours)  but it got raves from the hubs who couldn't resist it last night.

  • Congrats on th 10lbs!  That's a good bit of weight to lose, so kudos to you.

    Monday - Leftovers

    Tuesday - Salmon w/tomatoes & quinoa

    Wednesday - Probably go out

    Thursday - Pork tenderloin & brussell sprouts

    Friday - Veal cutlets w/greens

    Wednesday- Italian Chicken crockpot
    Thursday-  Twice baked BBQ and chicken sweet potatoes
    Friday- My night off from cooking. 
    Saturday- Balsamic Pot Roast with roasted broccoli
    Sunday-  meeting friends for dinner
    (day shift)
    Monday- Macaroni Casserole from Skinny Taste
    Tuesday- Apples and Pork loin in the crock pot
    Wednesday- Chicken pot, chicken pot, chicken pot piiiiiiieeeee
    Thursday- Salsa Chicken
    Friday-  I gave myself another night off.  Rebel.  
    Saturday- White bean and ham soup.

  • Congrats, Jess!  Between DH not being able to eat much, and us trying to use things up in anticipation of moving in a few weeks, our meals are kinda interesting sometimes around here these days!

    Monday we had burgers (venison burgers for DH), sweet potatoes, spinach, and pickles

    Tuesday was grilled chicken, more sweet potatoes, the rest of the spinach, and DH and I had baked potatoes too (DD doesn't eat them, hence the sweet potatoes being on the menu also)

    Tonight the kids and I are having spaghetti I had frozen and am defrosting, and I'll heat up some of the ready-made freezer meatballs.  DH is going to have some soup.

    Tomorrow my boss and I will probably order out and I'll bring something home for everyone...but on the off chance we don't end up ordering out, we'll probably do soup and grilled cheese.

    Friday DH and I are teaching Pre-Cana, so we get pizza for dinner there (white for him, of course), and I'll leave some mac & cheese for the kids to eat, though my aunt (who is watching them for us) will probably show up with Chick-fil-A because she loves to spoil them.

    Saturday we are supposed to go to BIL's house to have dinner to celebrate FIL...waiting to hear what we are having/what we need to make or bring.  We are teaching Pre-Cana all day again so I'm kinda hoping to be assigned easier stuff- wine, apps, a dessert, whatever.

    Sunday we are having a friend come watch the kids so that we can pack for awhile...I'm thinking we may use a gift certificate for dinner so we can go out and offer to treat her but not feel bad spending money right now with everything going on!

    I am using MFP to track myself and I am really liking it - down 2.5 pounds in two weeks.  It's great because we are doing the Fresh 20 meal plan and all of the meals are already saved in the database.  I hate guessing the calorie amounts for scratch-made meals.

    Sunday - pasta e fagiole
    Monday - fresh20 arugula gremolata steak, lightened up creamed spinach and roasted potatoes
    Tues - fresh20 orange pecan salmon, quinoa, and roasted balsamic brussel sprouts with craisins
    Weds - shrimp pad thai with edemame
    Thurs - pasta e fagiole leftovers
    Fri - work event
    Sat - out with DH's co-workers
