  • We had slow cooker BBQ pork sandwiches on Sunday.  Leftovers of that yesterday.  Since I was sick last week and now A is sick, I haven't gone to the store so we have no food.  DH may be grabbing something on his way home from work today and tomorrow because I am too worn out to think of making anything.

    Thursday - Dinner at my SIL's for my niece's birthday
    Friday - My bro and his GF are coming over so I THINK we're having stuffed shells, tomato/cucumber/avocado salad and garlic bread.  And lots of wine.  (We have too many bottles to store and A keeps getting at them. So bro and GF are coming over to help us drink some.  Cue headache Saturday morning!)

  • Monday: ribs in the crockpot, oven potatoes, and mixed veg

    Tuesday: Chili

    Wednesday: ham and scalloped potatoes

    Thursday: crockpot Greek pork

    Friday: sloppy joes

     

  • Monday : I made a tapioca flour/coconut flour blend pizza dough. Pizza with extra cheese, yellow peppers, ham, and mushrooms.  Yummy.
    Tuesday : Green and yellow bell pepper nachos.  All of the toppings on slices of the peppers and the peppers are used as the chips! 
    Wednesday : maple mustard chicken and artichokes
    Thursday : cilantro lime chicken and the crock pot
    Friday : Sweet potato chili cheese fries

  • My whole menu is tentative right now, but here's what I'm thinking....

    Monday: veggie and beef stir fry (rice for MH, plain for me)

    Tuesday: chili

    Wednesday: salmon w/ veggies on brown rice

    Thursday: slow cooked lemon garlic chicken w/ quinoa and veggies

    Friday: stuffed green pepper soup

  • We had slow cooker BBQ chicken sandwiches yesterday, and we're having that again tonight.

    After that, we're sort of winging it for the rest of the week.  We may actually have big salads tonight instead of BBQ, because I think the lettuce we have is in its last days.  After reading Packfan's post, I may stop and pick up some stuffed shells on the way home, and have those with salad.  I haven't had them in ages and I love them so much.

    Probably stir fry one night to use up some other sweet peppers and things that don't have much time left in the fridge.
  • Monday: We ate out, since we went to a Hockey game. 

    Tuesday: It's Wino Tuesday, but I might not go, because I am getting an eye infection, and might just not be up for it. If I don't go, I'll probably just marinate some chicken breasts and have brown rice and some veggies.

    Wednesday: I have IRL book club, and we are meeting at a deep dish pizza place.

    Thursday: I am getting MAH HUR DID.  This usually takes all evening, so I'll pick up some take out.

    Friday: Sausage and peppers over rice

  • I had to run to the grocery store this week without making a list or a meal plan first (I hate not having a plan!)  
    I bought a steak, a package of chicken breasts, and a small package of honey-baked ham.  These will be paired, somehow, with the veggies we got from our CSA this week - Brussels sprouts, zucchini, a fennel, some other stuff, and with whatever is in the pantry/freezer.

    Tonight:  Either chicken or pasta with sweet italian sausages

    Wed:  The opposite of tonight.

    Thursday:  no clue

    Friday:  We're going out to dinner.

  • Monday- Frozen pizza
    Tuesday- Taco Bell...we're really being healthy these last two days, obv.
    Wednesday- Dinner at MIL's house. So I'm not really sure
    Thursday- Marinated/baked salmon, brown rice, steamed broccoli to make up for Mon and Tues
    Friday- Maybe a veggie/steak or chicken stir fry with leftover rice, if I make enough
    Saturday- I'd love to make chili beans or homemade chicken noodle soup. Hmm..
    Sunday- If not leftovers from Saturday, then I have no idea.

    It is pretty amazing, especially being a gluten free pizza, though working with tapioca flour is really weird. 

    @KrsCrp83 I love doing nachos with peppers.  Slightly less of a crunch, but still yummy.

    Slice potatos fairly thin. The recipe calls for 12, last time I only used 10.
    Dice Onion (1 cup) and shred cheese (1 cup or more if you like cheese).
    Layer potatoes, tuna(one can/layer, usually 2 cans total), onion and cheese. 
    Mix a can of cream of mushroom soup with 1 cup milk. Pour half over first set of layers.
    Layer again,put remaining potatoes and cheese on top. Sprinkle with breadcrumbs. Bake at 350 for 60 mins.
