Anyone have a good recipe? I'm in charge of bringing a potato side dish to family dinner this weekend. Looking to try something new.

Um, yes ma'am. This is my go-to for potlucks.
1 Cup sour cream (I use plain greek yogurt and don't tell anyone)
1 Can cream of chicken soup
1 Onion, diced
1 32oz bag frozen hashbrowns
1 bag shredded cheddar cheese (Love using sharp cheddar)
1 stick melted butter (optional, but it gives the crispy top to the cheese)
Put hashbrowns in bottom of 9x13, mix soup, onion, and SC together and spread on top. Top with shredded cheese, then melted butter. Bake at 350 for 1 hour.
Crockpot variation: Mix all of the ingredients together and cook them on low for 8 hours or high for 4.

8 medium potatoes
8 tbs butter
pepper (I use white)
¼ tsp salt
6 tbs flour
1C grated sharp cheddar
2 ½ C light cream
½ C bread crumbs
Peel, dice and boil potatoes until on the firm side of done, drain
Lightly grease (with butter) casserole pan
On stove top melt 6 tbs butter blend in flour (often I use less flour about 4 tbs otherwise sauce is too thick)
Gradually add cream, stirring until thickened (if you make it ahead of time, thinner, but still thick, because it will thicken as it sits)
Add salt and pepper.
Assemble, layer of potato, layer of sauce, cheese. Repeat.
Top with bread crumbs that have been tossed with remaining butter. (I usually increase the bread crumbs and butter because we all love the topping)
Bake 400 until bubbly about 20-30 minutes. If you make the day before bring casserole to room temp before baking because the top of the crust burns before the rest is heated through, especially if using the top oven.

EDD: 1/21/14... Induced early at 36+6. Our LO was born 12/30/13
