Casseroles for a new Mom??

One of my good friends just had a baby and I want to make a meal for her. We recently made them Shrimp & Corn Chowder and I was thinking some kind of casserole for this week, but I am stumped at a good one. Show me your casseroles :-)

  • My only suggestion is to skip the lasagna.  We got so much from our family and friends. While it was very much appreciated, I still can't stand the thought of eating it again 15 months later.

  • Whatever you decide, think about dividing it up into portions and delivering them that way.  While it was nice for people to bring an entire pan of lasagna or a huge pot of chili, my fridge had no way to fit all those giant dishes.  It would have been nice to have a couple of individually sized portions ready to pop into the microwave.

  • I don't tend to bring casseroles.. I bring cold cuts, cheese, rolls, macaroni or potato salad, fruit, etc.  That way people can grab whatever they want, whenever they want it and don't have to worry about allergies or someone not liking something.

    @SilverGlitter05 Have you ever tried this recipe with uncooked rice?  I hate cooking just 2 cups of rice in my rice cooker.

    OMG do it!! The left overs are just as good too. My co-workers always beg me to bring them some in.
  • @MrsC7 No, but I use the microwaveable rice because I hate cooking rice too and it turns out fine.
  • A super easy and yummy chicken enchilada recipe:
    Quick and Easy Chicken Enchilada Casserole

    Author: Sara @ Budget Savvy Diva
    Prep time: 1 hour
    Cook time: 45 mins
    Total time: 1 hour 45 mins
    Serves: 6
    Ingredients
    • 2 skinless, boneless chicken breast – cooked and shredded
    • bunch of cilantro, finely diced
    • 18 (6 inch) corn tortillas, cut into fourths
    • 1 (28 ounce) can red chile enchilada sauce
    • 1 (16 ounce) shredded Monterey Jack cheese
    • 1 (8 ounce) container reduced fat sour cream
    • 2 teaspoons of taco seasoning – Budget Savvy Diva’s has a homemade taco seasoning on the site
    • pinch of salt
    • 1/2 teaspoon of pepper
    Instructions
    1. Side Note: To get shredded chicken – I boil the chicken for 45 minutes – let the chicken cool then shred the chicken
    2. Preheat oven to 350.
    3. Place 14 ounces of sauce into a 9×13 pan.
    4. Place tortilla triangles over the sauce. With the rest of the tortilla place in a bowl with the rest of the sauce ( it is going to soak much of it up).
    5. In a medium bowl mix – salt, pepper, sour cream, chicken, cilantro, taco seasoning
    6. Top casserole with 1/2 of chicken mixture.
    7. Top with 1/2 Cheese
    8. Top with layer of tortillas
    9. Layer with rest of chicken mixture
    10. Layer with 1/2 amount of the cheese
    11. Cook covered for 45 minutes
    12. I used the broiler for the last 5 minutes to get my final results. Totally optional
    13. Enjoy!

  • I really like the deli meat and salad idea krscrp mentioned. Have you thought about taking her a few crock pot freezer meals? Most people have a crock pot and this allows the family to decide when they want to use your meal (they may have a ton of stuff left over right now if she just had the baby). Plus most of the pinterest recipes make at least 2 bags of meals os you could make a few for her and have a few to keep for yourself while only doing prep work once.

  • Veggie or fruit tray for sure!! I ate a couple of fruit trays after Ihad Alex.
  • I usually bring veggie and fruit trays or ditto MrsC7. I made chili for dinner one night in November and doubled it and froze enough for 2-3 people to eat for a friend when she had a baby. I've also brought frozen chicken and dumplings, again in small portions. Chicken casserole too because it's the most unhealthy/yummy comfort food lol.

    I like the idea about bringing deli/cheese trays and maybe some croissants or large rolls. Filing that one for later!

  • I usually make chicken and rice rolls. Basically just cooked chicken, taco seasoning, rotel, cooked rice, and a little cheese all mixed together and then wrapped in about 10 tortillas. They freeze well wrapped in tin foil and they can just take out 1-2 at a time that way, heat and eat. DH loves these.

  • Thanks so much ladies!!! Wonderful ideas. We gave them the soup in 2 containers that they could freeze. We will prob bring them some sort of casserole and fruit next week then will bring something further down the road.
