I hate cooking but am always looking for new recipes. Tried this one last night and it was really good and easy! (I cut the butter in half though and I think I might use even less next time).

Lemon Horseradish Potatoes
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons prepared horseradish
2 tablespoons fresh lemon juice
1 1/2 pounds small new potatoes, unpeeled (I just cut up small red potatoes because that's what I had)

1.Preheat oven to 350 degrees F (175 degrees C).
2.Melt butter in a 2 quart casserole dish in the oven. Stir in salt, pepper, horseradish and lemon juice. Place potatoes in dish and toss to coat with butter mixture.
3.Cover and bake in preheated oven for 1 hour, or until potatoes are tender. Stir occasionally.

    This is my favorite way to make roasted potatoes: Cut up a bunch of new/red potatoes and throw them on a foil lined cookie sheet (i usually do around 10, depending on how big they are). Cut the tops off 2-3 heads of garlic & add the garlic to the cookie sheet. I usually also mix the tops in too because I just like the smell/taste of roasted garlic. Pour 1/2 cup of Olive Oil over potatoes & garlic then add 1/2 cup of white wine. Sprinkle generously with Kosher salt and some pepper. Shake the sheet a little to make sure everything is coated nicely.  Cover with foil and bake for 45 mins @ 375 , uncover and cook an additional 20-30 mins. Prepare for your house to smell amazing.

  • Do you ever roast red potatoes coated in oil and that powdered ranch dip stuff?  Divine.  Also maybe a little WT, but whatevs.

    My favorite are Lemon Garlic Potatoes.  It's exactly like the Lemon Horseradish recipe posted above, except no horseradish and add a couple cloves of minced garlic (except I up it to like 5 cloves, because we love it.)  Also toss on ~1/2 Cup of shredded parmesan cheese.  Uncover for the last 10 or 2 minutes.

    It's a shame my husband hates horseradish, because those sound delicious.  Now I want them.
