Weekly Dinner Menu

Need some ideas! What's on your menu this week? So far I only have 2 days. Monday: Taco night Tuesday: chicken drums with mashed potatoes and salad

  • I don't understand what is going on with my paragraphs! This is starting to annoy me.
  • I really suck at making weekly menus.  I usually think of what to eat for dinner every day after I have lunch.  Tonight we will probably have fake fried chicken and salad.

    There's a theme here.  I made the filling this morning, so I just have to stuff a tortilla, sprinkle cheese, and bake for 15 min.

  • Tonight:  Turkey smoked sausage with scalloped potates, green beans, and salad.
    Monday:  Shepherd's pie with leftover mashed potatoes from the other night.
    Tuesday:  Leftovers...whatever is in the fridge/freezer.
    Wednesday:  Baked chicken with potatoes and green beans (Pinterest).
    Thursday:  Frozen pizza.
    Friday:  Benefit dinner with my parents.
    Saturday:  Frozen pizza or shrimp stir-fry.
  • I don't really do weekly food schedules. I buy what's on sale, stock up, and go with that for 2 weeks, just finding recipes or using ones I know off hand. It's a lot easier for me than having a set schedule.

    I don't have a schedule, either, but the Chicken Marsala recipe on this website is very good. Especially if you get the Marsala wine from Trader Joe's. It's a pretty easy recipe too.

  • Sun- Homemade fried rice

    Mon-Frozen pizza for H, frozen ravioli for me (late night)

    Tues-Pasta with homemade sauce

    Wed-Rice pilaf, roasted Brussels sprouts

    Thurs-Dinner meeting for me=frozen pizza for H (thank the heavens for frozen pizza!)

    Fri-Take 2 with my new pasta maker. It's a big learning curve!

    Sat-Tortilla espanola. Look it up! It's a cheap but slightly time consuming egg and potato dish. I lurrrrve it but it's not the healthiest.
  • Tonight: Chipotle Bacon Meatloaf
    Tomorrow: I have a Tastefully Simple meeting and will eat our yummy new products.  H will be at home jealous eating leftovers.
    Tuesday: Homemade Gluten free pizza
    Wednesday: Rustic Herb Chicken Soup

    ...That's as far as I've gotten.

    Ha sometimes - but it's easy and pretty healthy.  And honestly I hate to cook after work.  I'm usually starving and can't wait that long.

    Not exactly cost effective, but I love the frozen chicken Marsala dinner from TJ's. So good
  • Monday: MILs for dinner ( we do that every Monday that my SIL doesn't have Jobies)
    Tuesday: London Broil with a veggie side and a starch/pasta side
    Wed: Most likely chicken breasts
    Thursday: MILs for dinner
    Friday: Not sure, I have the child most of the afternoon so I will decide what we eat.
    Saturday/ Sunday: May do a crock pot meal so that there is leftovers for lunch the following week.

    I tend to keep some On Cors in the freezer if neither MW or I want to cook (she works from home but usually doesn't finish work until 6 pm.  I usually don't get home until between 5 and 6 pm).  One of the things that we doing is tag team cooking.  I will start the main course then we will tag team the sides depending on how needy our LO is.
  • Monday -- quesedillas/quesedilla bowl with quinoa, black beans and sauteed veggies
    Tuesday -- salad
    Wednesday -- Veggie burgers with sweet potato fries and collard greens
    Thursday -- Lentil soup
    Friday -- Homemade pizza

    haha we do this a lot.  Especially since a casserole is 6-8 servings, and there's only 2 of us.  I'm from a big southern family, we don't know how to cook for 2.  I'm glad H loves leftovers as much as me.

    And now I want enchiladas!

  • Not sure what night but meal options for the week are:

    Spaghetti and salad
    Chicken legs and a veggie side
    Pork chops, salad, rice
    Fish, homemade french fries and salad
    Chicken breasts and veggie side
    Breakfast - probably bacon and eggs
    Chicken apple sausage, salad, veggie side

    We try to keep it healthy and simple.

  • I finally got internet set up so I can post again! :)

    Like some PPs I can have repeat meals like rice and bans/burritos or some variation of that everyday and be good. DH can't stand to do that so when we're together I actually try to make a variety of things. I do try to keep meals simple though because he works nights, so I make dinner for me and he has leftovers the next day during his lunch break. 

    I'm all about saving time so on the weekends I try to make a big pot of beans and/or rice that I can use throughout the week. I also make a bunch of breakfast burritos and freeze them for a quick breakfast. Breakfasts are usually some combination of toast, fruit and yogurt if we don't grab a burrito, and my go to snacks are cut up veggies and dip (hummus for me, ranch for DH) or some fruit.

    This is what I'm thinking for dinner this week--in no particular order. We pretty much always also have a salad with dinner too, I just didn't write that down below.

    -Enchiladas (per DH's request)
    -Ramen Noodle salad (also requested by DH-I'll probably eat something else since I don't like it)
    -Tacos
    -Vegetarian Jambalaya
    -Cheese Ravioli with a vegetable/primavera type sauce
    -Ravioli pasta salad (got a big tub of ravioli on sale at Costco that I need to use up, haha)
    -Moroccan Stew served over any leftover rice

  • I looked up that recipe for the tortilla espanola and it looks good. I'll have to try it sometime.

    DH got the recipe for the stew out of an old Better Homes and Gardens cookbook his mom gave him I think. I'm pretty sure I have it saved on my computer if you want me to PM it to you. It's super easy and adaptable
  • Monday - mac-n-cheese with broccoli and chicken

    Tuesday - Veggie burritos, green salad

    Wednesday - Spag and meatballs (homemade), green salad

    Thursday - Salmon with quinoa and broccoli (or brussels sprouts if they look good this week). The girls usually get breakfast for dinner (eggs, waffles, yogurt, blueberries, and some veggie) this day because they don't like salmon (yet!)

    Friday - Homemade pizza, green salad

  • I started a two week meal planning schedule to try to save up on groceries. So far with attempt #1 it has. This is week 2 and so far I'm planning:

    Mon: Spaghetti and Meatballs

    Tues: Homemade spicy chicken wings w/ veggie and a baked potato

    Wednesday: leftovers or chicken nuggets with pasta 

    Thursday: usually breakfast - waffles/pancakes/french toast with scrambled eggs

    Friday: always go out to eat before grocery shopping for the next two weeks.

  • Kind of new to the boards here...

    Last night: "Uptown Meatloaf", homemade mashed potatoes and sweet carrots

    Monday: leftovers

    Tuesday: Crockpot tortellini, bread

    Wednesday: Zesty italian chicken (crockpot) and buttered noodles, green beans

    Thursday: easy night - either hot dogs or mac & cheese with corn on the side

    Friday: Pizza bake

    And, sometime over the weekend I want to make chicken lettuce wraps.
