Re: Confession Thursday

  • I confess that I am exhausted this week!!!  I've even been having a Coke in the afternoon, which is usually a treat item that I have on weekends sometimes.

We had another cold snap and I swear it's making everyone tired and cranky.  Trying to get pumped up for DH's birthday tomorrow, so hopefully I will go to bed extra early tonight and get some ZZZ's.

  • I confess that I blame my house for my weight gain. Ever since we bought it I have gained and haven't had the motivation to go back to the gym. We keep saying that we are going but it doesn't happen. Hopefully we will get motivated soon.

  • I have no intention of doing any real work today.  I am far to excited for this weekend!  We're going to see Verekai tonight and I'm also off tomorrow, so I've already mentally checked out for the next few days.  I'm even about to leave work for an hour or so to go shopping with me mom!!  I've really gotta get on it next week, because I am way, way, WAY behind!

  • Second confession, I can't wait for @ystaalenburg to post pics from her birthday party!!  Living vicariously to the max!

  • I confess I've not been that productive at work this week! Ha I blame it on IT problems, but it's also me bumping and face booking. Sssshhhhh!

Also I confess that I want to take a pregnancy test really bad but I'm holding out so I don't get a bfn and am bummed. At least I could drink a lot at happy hour tomorrow though. My temps are just so consistently high and my chart so pretty! Maybe I'm getting better at temping.

  • I just spent an entire meeting staring at someone's poorly done eyebrows!  I feel judgy, but she's blonde and I think she used a black pencil to draw them on and they were too high up.  She just looked really surprised the whole meeting.
  • I also confess that I am intimidated by the lasagna noodles I bought.  I've never made a lasagna and I think I bit off more than I can chew.  Anyone know how to make a lasagna?

  • I confess I'm on a little bit of a crazy work high right now. I found out earlier this week that I got both a promotion and a raise. (The raise thing supposedly wasn't supposed to happen I thought, so that was a nice surprise) So it's kind of pushing me to get more stuff done around the lab.

Lasagna isn't as bad as it seems. If you got the noodles that you cook first, you want to make sure not to cook them for too long - maybe 6 minutes or so. Then in your pan, put a light layer of sauce first, then noodles, ricotta, sauce. Repeat. Top with mozzarella. Bake until bubbly and the cheese is browned a bit.

I usually mix one egg, Italian spices, Parmesan and mozzarella in with the ricotta before layering.

What temp do you bake it at?  Do you use the whole box of lasagna noodles?

  • I agree with @frank139, I am really excited for pictures of @ystaalenburg's party too!

    @lwoehlk FX for you!

I had an ultrasound today and everything went really well.  The baby is right on schedule and developing well.  My confession is we are team green and I am pretty sure I can identify the sex from the picture we have.  I am really disappointed to know.  I really wanted that surprise in August.

I don't remember the temp I bake mine on but I think it's like. 350 for 40 mins. Lasagne is really easy, but I would google a recipe if this is your first rodeo....or heck ask the resident Italian. Paging @Nic12184!! I'm sure her recipe knocks the socks off my moms!

Thanks for the finger crossing @sjs1013 & @frank139@msu.edu! I worry that I'm getting hopeful for nothing, but I suppose it's normal to during the 2ww. I've never had so many 98.8 or higher temps consistently. But other than that and being exhausted (I almost fell asleep during my dental cleaning Tues night), I feel fine. Time will tell. I would love to have something extra to be thankful for this Thanksgiving. ;)

So, for lasagna. I usually cheat and use the Barilla no boil noodles. You can just start layering the noodles out of the box without having to worry about boiling them first. It's a beautiful thing! If you do boil the noodles first, make sure you don't overcook them (pull them before you think they're done) and put some olive oil on them so they don't stick.

Sometimes I put spinach in it, sometimes I don't. Also, I don't eat red meat nor do I like meat in my lasagna, so I leave the meat out.
