  • We don't have set days for each meal, but this is what I have planned.

    1. Steak, baked potatoes, and steamed broccoli.

    2. Chicken/Tofu stir fry.

    3. Spaghetti w/ quinoa meatballs.

    4. Beef roast in the crockpot with God knows what (we both hate this, but need to use up the roast).

    5. Leftover Chili w/ cornbread.

    6. Chicken tortilla soup.

    My fingers are crossed that the spaghetti turns out.  It's my first attempt at feeding H gluten free spaghetti. 
    The cornbread I made last night to have with the chili, and it was GF.  It left something to be desired. :-(

    @tudorrose11. I just use lettuce, carrots, croutons, whatever kind of cheese i have on hand. and for the chicken I grill some chicken and then toss it in Ken's buffalo sauce found at the super market. DH adds onions to his and whatever else is in the frig Iet him get away with:)

    This is from Hyvee. 
    TJ's is 2 hours away from us.  So I'm hoping this tastes good.  Although I can't wait till we go to the suburbs to visit friends this summer, and I can stop there and stock up on a bunch of GF stuff.

  • @brij2006 - What brand of pasta did you find? I've tried quite a few, and ancient grains is the best (for spaghetti), but there are so many out there that are pretty good. I highly recommend rinsing the noodles after cooking; it helps prevent the sliminess that sometimes happens (I never rinse regular noodles). And stir often, those suckers clump like nobody's business. I hope it turns out great!

  • @goodwolf Thank you so much for the suggestions!  I will definitely watch them.

    I bought the Ronzoni ones.  Just hoping the texture is good.  H doesn't care for the whole grain ones I used to buy, and he isn't a huge spaghetti fan to begin with.  So hopefully this will be okay for him.

  • DH doesn't meal plan. Many days I'll get a text asking what I want for dinner. Dude...I've told you before to meal plan for the week so this doesn't happen! :P

    The only thing I know for sure: I'm getting eggplant parm this week!! We went to Olive Garden Saturday night, and I told him I wouldn't get the eggplant parm (my favorite ever Italian dish) if he promised he'd make it this week. I haven't had it in months!

  • @brij2006 - Your husband sounds a lot like mine... hopefully he'll come around to the taste of GF foods! We're dealing with this same thing this week, I've been craving spaghetti like crazy but H just isn't a fan of pasta in the first place, let alone GF :P

  • @goodwolf Haha, it's been interesting in our house.  I made GF brownies last night.  His comment, "you know what these need?  Gluten."  Yes hunny, because gluten has a flavor.

    For now, I'm just trying to stick with things that are naturally GF. Then he doesn't complain so much.

    Oh, and question for you.  I love wraps for lunch.  Is there a certain brand that's good or something I could substitute?  I bought a package of some, but they were $5 for 6 of them and they fall apart if you fold them.

  • Now that DH is back from grocery shopping, I know we'll have lamb coconut curry tonight (yay!!), he plans to grill tomorrow night, he's got work Wednesday (so I have to figure out something for myself), and eggplant parm will be Thursday or Friday. Good week!

  • You're all so good at meal planning! I really need to get better with it. Our extent of meal planning is me asking DH during dinner what he wants to have the next night. Starting now will make it easier when the LO is here and we're used to planning. How do you decide in advance? I know DH is the type that will say ok and then not be in the mood for it when the time comes, so I'm just curious.

  • @ljraff29 I just see what we have in the house and try and come up with new/different options from the week before. I always ask DH if there is something he wants and go from there.  when I shop if like spaghetti squash is on sale I pick on up and try and plan a meal around it in the next week or two....I try to buy as little as possible from the super market.

    Wednesday: Lemon, prosciutto, and spinach smothered chicken breasts, sweet potato fries with honey
    Thursday: Curried tuna cakes topped with avocado and  some side I have determined yet
