Help me plan my Easter menu

I'm stuck.  I feel like I do the same menu every year so I want to change things up a bit.
So far we're having:
Ham
Scallop potatos
kiebasla
pierogi

I'm thinking of doing some new veggies this time around.  What are your thoughts on:
Roasted brussel sprouts
roasted carrotts and parsnips
????

Dessert will be apple pie and his mother always makes this gross cake that she insists everyone loves and we throw out after she leaves.

  • I think the brussel sprouts would be good. You could always do mac and cheese or salad. What about asparagus or some type of spinach as a veggie? We also always have some type of bread either corn read, rolls, or something different.
  • We usually do brussel sprouts with rendered bacon. Yum!!! I am also a big fan of asparagus. 

    For dessert, I have made this baby a few times and it is always a hit! (I have also see it with a layer of vanilla pudding between the chocolate pudding and top layer of cool whip.)

    We make something similar but it has a graham cracker crust on bottom and a layer of cool whip/cream cheese mix then pudding and then cool whip. We call it Four Layer Delight. It is amazing!

    I made haluski for the first time last Christmas and it wasn't too bad. Granny always made it but she passed away before Christmas so I took over the job. Granny would have been proud!

  • What about a roasted vegetable medley. Brussel sprouts, carrots, onions, sweet peppers, sweet potatoes. We do green been casserole, one of the two times we eat it a year.
