What's everyone cooking these days?

How was everyone's Easter? Are there lots of leftovers?

Friday, we ordered in pizza.

Saturday: chicken sandwiches, oven baked steak fries and coleslaw

Sunday: we continued our Easter dinner tradition with dinner at the Outback

Monday: Target has Hormel marinated porkloins on sale for $7.99, and you get a Country Crock side dish for free, so I bought the Amber Ale porkloin and mashed potatoes (this was my first time eating them from a container, lol, and they were quite tasty!), sweet carrots

Tuesday: leftovers of porkloin and my Outback dinner

Wednesday: Cheesy Chicken Green Bean Casserole, although I might substitute cream cheese for the heavy cream and mayonnaise. Side of rice. (I've never tried this recipe, but it looks delicious!)

Thursday: leftovers, I hope

Friday: hot dogs and tater tots

Saturday: Not sure yet

Sunday: I think DH is taking the oldest to a drag race as part of his birthday gift, so they'll be gone all day. I'll find something to do with the younger two.

Re: What's everyone cooking these days?

  • We have been finishing up our kitchen update, so we have been ordering out or eating sandwiches or cereal for the last week.  I am looking forward to getting back into a regular dinner routine, so I will be stalking this post for recipe ideas!  (that I can pass on to DH, lol)
  • We are on Polish food from mom this week.  We were OOT for Easter and Mom sent us home with her stuffed cabbage and we ate that last night.  Tonight is kielbasa we were sent home with and sides of mac and cheese and peas.  I will have to think of what else to do with the kielbasa for the rest of the week.

  • Wait, I am still expected to cook??

    Seriously, it's been bad. I mean, really bad.  We've had stuff going on during the week which just throws me into a downward spiral of feeling like I can't cook at all that week.  we've been out of town the past few weekends, but no plans this weekend, so I really need to crack down and make it to the grocery store for some real shopping (as opposed to just the quick trips of running in and grabbing milk and some type of fruit) and get back to menu planning.

  • Emmy, I feel the same.  I feel like I haven't cooked a proper meal in forever.  Soccer started, so that takes up one night a week.  And DH has been working late a few nights a week, so I don't cook much if he's not home.   It's so easy to fall in to the "make something quick" rut!  
  • I really need to go to the store. I usually do it on Sunday or Monday but Sunday was Easter and last night I had to get the dog from the vet.

    Friday: Benihana's for my birthday
    Saturday: Perogies Nathan bought from some lady at work, OMG they are delicious!
    Sunday: All day pig out at my parents
    Monday: Nathan had leftovers and I had Annie's Butter & Parmesan Spirals. If you haven't tried these, I highly recommend them. They are delicious.
    Tuesday: Spaghetti with Sun dried Tomatoes and Spinach
    Wednesday: chopped italian sandwiches on hawaiian buns
    Thursday: pork chops and some potatoes I got at Trader Joes last week
    Friday: probably out
    Saturday: burgers and some sort of salad

  • Ugh, cooking. That thing I need to get back to. We had house guests for the holiday, so we're in leftover hell right now. I need to get back into meal planning mode stat!
  • Monday: Leftover ham, mac n cheese, peas

    Tuesday: I'm working from home and this is in the crockpot right now http://www.highheelsandgrills.com/2012/08/italian-crockpot-chicken.html I've made it before and it's delicous, though a little salty. I throw in peas and mushrooms too.

    Wednesday: Baked pasta, garlic bread (making the baked farfalle today)

    Thursday: More leftover ham and mashed potatoes, brocolli - or leftover italian chicken

  • We were away all of last week, so no cooking at all for me :-D
    We got back late Friday and had costco dumplings for dinner.
    Saturday I made homemade pizza dough and topped it with roasted tomatoes and fresh mozzarella.
    Sunday we went to my mom's and had ham and kielbasa
    Monday was leftover pizza and salad
    Tonight we're using Steve's free big burrito birthday entree and going to Casbah
    Wednesday is leftover ham and kielbasa with roasted potatoes and salad
    I have to go to Baltmore for a funeral Thursday/Friday so Steve and the boys are on their own then.
