I'm embarrassed to say I have nothing planned for this week....
I rarely plan and we do our grocery shopping on Thursdays, so you're not alone. This week is wonky due to DH being committed two nights and me the third, so no dinner together until Thursday. Tonight I made breakfast burritos for myself for dinner with the leftover homemade tortillas from Saturday's nontraditional tacos. Tomorrow he's on his own and I'll be eating before rehearsal. Wednesday I'll make something chicken for myself and probably cook some of the homemade pierogies I made and froze on Friday along with a veg of some sort.
After this week we're on baby-time, and all dinners will come from the pretty massive stockpile I've collected from Trader Joe's ready-to-eat and freezer sections.
