I'm trying to cook vegetables more often. What easy vegetable sides do you make?
Can I marry them all?

  • roasting veggies is amazing.

    Cover a jellyroll pan with foil.  Place dry veggies on pan coat with olive oil salt and pepper (or any seasonings you think sound good)   cook at 425 for about 20 min.  You can put a dusting of cheese on towards the end for added flavor.

    Broccoli, green beans, asparagus, brussel sprouts... so many options.

    When I finally made these my H said they were the best veggies he has ever eaten


    Here is another recipe we love, and I have had requests  to make for friends and family.

    Love it so much. I usually omit the potatoes.
    But most of the time I just roast or sautée veggies for the side.

  • Roasted red/colored peppers in a pan w olive oil, salt & pepper.

    Toss carrots in a little oil, thyme, salt, pepper, roast on foil in oven, drizzle balsamic vinegar.

    Roasted sliced or chopped potatoes with white pepper.

    We also just toss any frozen veggie to steam in the microwave- add crushed red pepper, garlic pepper, salt, or Italian seasoning to taste.

  • I remembered that I also like frittatas and I once made a zucchini casserole- basically potato peeled & thin sliced zucchini layered with cheeses. Also, you could add zucchini peel to any pasta dish.

    We like to eat bok choy with pork & noodles. Sauce has sugar, soy sauce, sesame oil, rice vinegar, a dash of honey & red pepper flakes. Cook the chops & cut small, cook spaghetti noodles. Sauté the bok choy (cut in inch-size slices) with a dash of canola oil & ginger & garlic.

    Do you have a grill? The grill makes everything taste better. I just cut up whatever veggies are on sale, toss with olive oil and salt, and grill.

    Delicious! Bonus: usually toddler approved.

  • I picked up a copy of W/S Vegetable a Day cookbook at 5-below and have been working my way through.  I love how they are marked seasonally.

    If I'm looking for a quick side and have fresh veggies, I always steam them.  Typically about 15 minutes in a steam basket over boiling water, add salt, add butter if you want. 

    If I'm already grilling, I'll throw asparagus or brussels sprouts on the grill.

    This.  Asparagus- I sprinkle some Parmesan cheese and toss to coat.  Green beans - add a little balsamic vinegar. 

    DH HATES cooked veggies but will eat pretty much any of them if they are roasted.  Carrots are really good roasted too.

    I love simple grilled or roasted veggies, too.  That's how I pretty much always cook them.  Oh, and I steam broccoli a lot.

    I usually roast or grill veggis.  I also buy the frozen bags sometimes that you just put in the microwave and steam.

    Omg, these are so good! I could never get them to stay in cake form, so we just scramble them. Even picky husband loves them.
    We also make these zucchini chips (we call them crack chips). They're even better with patty pan squash:
    Zucchini chips

    * 1/4c breadcrumbs
    * 1/4c fresh grated Parmesan cheese
    * 1/4 tsp seasoned salt... Read More
    * 1/4 tsp garlic powder
    * 1/8 tsp pepper
    * 2tbsp milk

    * 2 1/2c sliced zucchini (about two small zucchini sliced into about a 1/4" thin rounds)

    * cooking spray

    preheat oven to 425

    whisk together first 5 ingredients in dredging dish
    place milk in a shallow bowl - also for dredging
    dip zucchini in milk, dredge in crumb mix
    place coated slices on sprayed ovenproof wire rack (which is itself on a cookie sheet
    bake @ 425 for 30min or until brown and crisp.

    @MrsC7 - We've only used cheddar, but I'm sure you could sub. I'd suggest something sharp.

    I made the most delicious roasted carrots last night. I cut them into sticks, tossed them with olive oil, then sprinkled on some salt, pepper, garlic powder, and tarragon. Soooo yummy!

  • We've subbed mozzarella before because dh loves it, but I think cheddar is better. (Heh.)

  • I love patty pans :) I roast pretty much everything. Play around with different peppers, salts (use kosher or sea salt not table salt) and olive oils ex: garlic infused, herbed etc. they really make huge differences in taste. I also buy a ton of colorful veggies like golden beets, purple carrots and the like. They're just fun to eat. I do 400 for 20 minutes as i like my veggies super crisp. Consider roasting these: carrots, broccoli, potatoes either cut up or small ones whole, cipollini onions, beets, parsnip, acorn squash, butternut squash. So many choices.
