Ultimate grilled cheese

I'm totally fantasizing about grilled cheese right now and am assembling a grocery list to pick up the required ingredients after work. I've googled the anatomy of the perfect grilled cheese and the recommendation is a creamy medium (ex. greek yogurt or cream cheese), a melty cheese (ex mozerrella) and a flavorful cheese (ex. sharp cheddar). Any killer combination recommendations??

  • Mmmm grilled cheese.

    My favorite is one I had almost daily for lunch in London.  Brie, apple chutney, and smoked ham.  To. Die. For.

    Ummm...I think I need a moment. Cheese....

    I use havarti as my creamy cheese and usually add in a spicy cheese because I like the kick. My favorite is havarti and 3-pepper jack (both Boar's Head brand) with a slice of tomato.

    I really believe the bread makes all the difference, too. I like hearty breads that give off a nutty essence when grilled, but plain ol' white works well, too.

    And...I think I may need to make a grilled cheese sandwich when I get home now.

  • @brij2006, while yours sounds divine - I'm a purest! I love my grilled cheese in it's most original form...no fruit, no veg, no meat.  But if we could call your sandwich something else, I'd be all over that. 

    Also, do you have go-to sides for your grilled cheese?  I always have tomato soup and bread and butter pickles on the side, yum!

  • The best grilled cheese I've ever made was Gruyere cheese with sliced Saturn (doughnut) peaches on sourdough bread.  Like, best ever. It sounds weird, but the combo is amazing. I'm also just a fan of gruyere on grilled cheese anyway!

    In Christ alone my hope is found. He is my LIGHT, my STRENGTH, and my SONG!

    T-TTC since Dec 2008. PCOS/nonexistant cycles(anovulation) and endo. HSG in '10 revealed both tubes blocked. Lap surgery in Dec '10 to correct. Failed Clomid/IUI and injectable(Bravelle)/IUI cycles so far.

  • H always makes it with Velveeta instead, but I love to use gouda when making a traditional one.  The smoky flavor is divine. 

    During the summer we will have pasta salad with it or Ruffles with french onion dip.

    I dip mine in ranch dressing...and not just any kind. It has to be buttermilk and it has to be runny.

    I have to have mine with kosher dill pickle spears.

  • OMG, all of you posting about grilled cheeses with fruit (apple/pear/peach) are killing me! I want it now!! They are the BEST.

    I had an amazing grilled cheese a week or so ago. Brie cheese, apple slices, and truffled honey. AH-mazing!

    Best grilled cheese I ever had was made by a hippy in the parking lot at a Phish show. He used homemade rye bread super think with garlic and rosemary infused EVOO instead of butter on the outsides and a mixture of plain old american and cheddar cheese. And a sprinkle of Parmesan cheese after it was cut. And it had to be cut diagonally.

    For a traditional-ish just cheese grilled cheese I go for this:

    Applewood smoked gouda, smoked mozzarella, and smoked provolone. Mix half butter and half honey mustard and spread over bread (something that will get good and crusty like French bread or ciabatta). I cook it on my panini press using the griddle side instead of panini side. You will die.

    For a quick grilled cheese the other day I did something like brij. Buttered bread, brie, and thinly sliced apples.

  • I just had a grilled cheese sandwich and tomato soup yesterday! It's was just plain old cheddar cheese though, so not much help there. :)
