I'm trying to cook vegetables more often. What easy vegetable sides do you make?

Love it so much. I usually omit the potatoes.
But most of the time I just roast or sautée veggies for the side.

Toss carrots in a little oil, thyme, salt, pepper, roast on foil in oven, drizzle balsamic vinegar.
Roasted sliced or chopped potatoes with white pepper.
We also just toss any frozen veggie to steam in the microwave- add crushed red pepper, garlic pepper, salt, or Italian seasoning to taste.

We like to eat bok choy with pork & noodles. Sauce has sugar, soy sauce, sesame oil, rice vinegar, a dash of honey & red pepper flakes. Cook the chops & cut small, cook spaghetti noodles. Sauté the bok choy (cut in inch-size slices) with a dash of canola oil & ginger & garlic.

I picked up a copy of W/S Vegetable a Day cookbook at 5-below and have been working my way through. I love how they are marked seasonally.
If I'm looking for a quick side and have fresh veggies, I always steam them. Typically about 15 minutes in a steam basket over boiling water, add salt, add butter if you want.
If I'm already grilling, I'll throw asparagus or brussels sprouts on the grill.
This. Asparagus- I sprinkle some Parmesan cheese and toss to coat. Green beans - add a little balsamic vinegar.
DH HATES cooked veggies but will eat pretty much any of them if they are roasted. Carrots are really good roasted too.
