Quick dinner ideas?

So insanity has begun this week with soccer starting adding to dd's tball. With homework and getting ready, I feel like I have no time to really cook anything, even normally quick meals.

Any suggestions? Sandwiches and I guess any possible leftovers. But we are talking Monday - Thursday so sandwiches 4 days straight sounds not so great!

There's really no time afterwards to grab food or make something for dd either.

  • Mac and Cheese microwaveable cups

    Chicken Nuggets and a veggie (all done in the microwave)

    Frozen pizza (20 mins in the oven)

    Buttered egg noodles and a veg (egg noodles boil up so fast!)

    Yogurt, cheese & crackers, and apple slices or carrot sticks with ranch

    Frozen food is my fast friend.

    Bake some fish/fish sticks and tator tots.  Microwave a frozen veggie. 

    Frozen lasagna or complete pasta meal.

  • Eggs and toast.  A bowl of cereal.  (Kids always think that is such a treat to eat cereal for dinner). 
  • Grilled cheese with salad
    Fish sticks with peas (frozen) and noodles
    Pancakes and French toast both reheat well, served with scrambled eggs
    Peanut butter and jelly with carrot sticks
    Hummus and carrots
    Apples, cheese and crackers

    We have soccer one night a week. There is no way to eat before as it starts at 5:30. Thankfully there is an Eat'n Park near the practice field, so we go there for dinner every Tuesday.

    When just one kid was playing, I would have dinner ready when they walked in the door at 7. Now that both kids play, we both need to be there and that isn't an option.

    Once or twice a season I will pack a picnic dinner to eat at the park after practice - pb&j, carrots, apples, cheddar bunnies.

    Most pasta dishes can be whipped together quickly. Pick up a rotisserie chicken on the weekend, shred it and throw it in. Actually, Costco now sells pre-packaged rotisserie chicken meat already shredded.

    Pasta with pesto and sundried tomatoes, all I do is cook the pasta and throw in the store bought pesto, cheese and jarred tomatoes. Toss some chicken on, 10 min. I used this recipe as a base, but used chicken instead of asparagus which would be delicious but I didn't have any on hand.

    If you are willing to do some prep work on the weekends, these Lasagna Roll Ups are delicious and reheat wonderfully in the microwave.

  • stir fry
    cheeseburgers
    rotisserie chicken
    fajitas
    pesto tortellini 

  • Tacos--especially if you have the meat already cooked and just need to re-heat
    Shredded beef or pork sandwiches (again precooked, reheat)
    Boneless pork chops cook quickly
    Pork & Sauerkraut in the crockpot
    Grilled cheese/Tomato soup
    Shrimp and feta pasta
    Broccoli & Cheese (frozen) over baked (crockpot or microwaved) potatoes
    Hot dogs

    I usually cook a whole chicken once a week (rotisserie chicken would work too.  Then I have left overs to quickly make:
    Chicken fried rice
    Chicken noodle soup
    Chicken Alfredo (jarred sauce/angel hair pasta)
    Chicken and gravy over biscuits

    You could also purposely make left overs.  Grilling on Sunday?  Grill extra chicken breasts to reheat Monday or Tuesday.  Make a big pasta salad, macaroni salad, potato salad or coleslaw to use a few days as a side.

  • my go to summer quick dinner consists of meat on the grill and a veggie for a side. Bonus that it creates like zero dishes.
  • Thanks ladies. I honestly don't have time to do most of these! I made chicken nuggets and Mac n cheese last night and there was barely any time to actually eat the food. We just are so crunched for time that if I have to actually cook something there isn't much time for eating.

    I think the best ideas for us are to make some extra stuff on the weekend and freeze. Even though I really don't have time for that either. It's so busy this month! Maybe I'll pick up a rotisserie chicken for next week too. Thanks for the ideas!
