bulk sausage ideas

we went to a farm and ordered a pig for the fall. Steve  decided he wanted a bunch of bulk sausage as part of our order, and the farmer gave us one he had on hand to try.

I haven't done much as far as bulk sausage cooking. Any recipe suggestions for bulk sausage?

  • I like to make stuffed zucchini boats.

    1. Cut a zucchini in half lengthwise, and hollow it out.

    3. Fill a frying pan with water, and place zucchini cut side down in water.  Heat until zucchini just starts to get tender. 

    4. Brown some bulk sausage.

    5. chop up what you scraped out of the middle of the zucchini.  Mix it with the sausage, some shredded cheese, some breadcrumbs, an egg, some diced tomato and diced onion.  (You could add whatever you want!)

    6.  Stuff the filling back into the zucchini boat. 

    7. Bake at 350 until hot all the way through and zucchini is tender.

    Yum!
  • I make something similar to this: Orecchiette with broccoli rabe & sausage. I have used spinach in place of the broccoli rabe too.

    Usually I just brown the sausage (we mix sweet & hot), add a large can of diced seasoned tomatoes, garlic, salt, pepper, basil and then mix with the cooked orecchiette, top with asiago, parmesean, or whatever italian cheese you prefer. And it is amazing the next day.

  • You can also mix it with beef for meatballs, make it into pattys and fry onion, peppers and add cheese for a sausage sandwich.

  • I make white bean and escarole soup with sausage.  Brown sausage, add escarole until it wilts with some minced garlic.  Add stock or broth. bring to a boil then reduce to a simmer. Add a couple cans of white beans, one of which has been smashed up to thicken hte soup.

    I got zucchini at the farmer's market yesterday. I think i'll try this tomorrow for dinner :)

  • I was also going to suggest meatballs.  I have a friend that makes meatballs from a mix of beef and sausage and her meatballs are to die for.   
  • I've used it in bolognese sauce.
