My H and I are in the market to replace our middle grade seven year old nonstick cookware and are having trouble making a decision. I am not sure I want to get another nonstick set, but we have had it for so long that I don't have a good idea about how difficult it would be to switch to cooking in stainless or in ceramic. We would also like to get something that would last for 10+ years.
What do you use to cook with and would you recommend it? Are there any brands to recommend or stay away from?

You do need oil to prevent sticking, but I'll take that trade off.
Every non stick cookware piece I've had starts flaking after a few years, and I'm not comfortable with that in my food.
I don't even like cooking with it when it's not flaking. Teflon is going to be eliminated by next year anyway.
So, I'd recommend cast iron, which I love, or stainless steel. I've never had a problem with any brand of either.
Though I'd love to try ceramic baking pans at some point.

"That depends a good deal on where you want to get to."
"I don't much care where –"
"Then it doesn't matter which way you go.”

Personally, I don't like cooking on nonstick pans, except my electric griddle for pancakes and eggs. And I treat that thing like gold so I don't scratch the non-stick surface. All the other non-stick pans I've had all ended up scratched and gross, and I'm sure I've eaten a fair amount of non-stick crap over the years before switching. At least you can clean stainless with steel wool.
I also have a big enameled cast iron dutch oven that I adore. It's my favorite thing to cook with.
