What's your favorite casserole? I'm looking, more specifically, for ones that are good from frozen. 

Maybe I should say hot dish too? That's the same thing, right? ;)

  • I love casseroles, so it will be hard for me to pick just one. None of these are particularly healthy, by the way.

  • I make what we call a Pizza Casserole, it's egg noodles, spaghetti sauce, ground beef and cheese on top.

  • I really like both of these!  I've made them for friends when they had babies and so far everyone seems to like them too.  For the second one, I made chicken covered with salsa in the crock pot and we had chicken tacos one night, then I used the rest of the chicken for this recipe and froze it.  I preferred it this way instead of using plain chicken.  I don't have the original sources where I copied these from.

    Baked Ziti 
    Ingredients
    1 pound dry ziti pasta (or really any kind of pasta would work- I actually used Penne pasta)
    1 onion, chopped
    1 pound lean ground beef (season with pepper, garlic powder, onion powder, and minced garlic)
    2 (26 ounce) jars spaghetti sauce (I added a zucchini to my sauce just for more veggies!)
    8 slices provolone cheese
    1 1/2 cups sour cream
     6 ounces mozzarella cheese, shredded
     2 tablespoons grated Parmesan cheese
    Directions
    1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 7-8 minutes; drain.
    2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
    3. Preheat the oven to 350 degrees F (175 degrees C). Spray 2 8x8 inch pans with non-stick cooking spray. Layer as follows in each pan: 1/4 of the ziti, 1/4 of the sauce, 4 slices of Provolone cheese, 1/2 of sour cream,  1/4 of ziti, 1/4 mozzarella cheese and 1/4 of sauce mixture. Top with grated Parmesan cheese and remaining mozzarella cheese.
    4. Bake covered for 30 minutes in the preheated oven, or until cheeses are melted.
      
    Layered Enchilada Casserole 
    2 cup cooked, shredded chicken (I just toss a few chicken breasts in the crock pot in the morning to cook) 
    1 can diced tomatoes, drained (15 oz) 
    1 can black beans, drained (15oz) 
    1 tub Santé Fe Blend Philadelphia Cooking Crème 
    2 cup shredded cheese. ( I used a combo of 3 cheddar and Pepper Jack) 
    3 flour tortillas (I used 6 inch) 
    1. Mix the chicken, tomatoes, beans, and cooking crème in a bowl. Combine well. 
    2. Place a 1/3 cup mixture on bottom of a pie plate or 8X8  freezer pan.  I buy the foil ones. Top with 1 flour tortilla. 
    3. Top tortilla with chicken mixture and cheese. Repeat layers and end with chicken mixture on top and top with last bit of cheese. 
    4. Double wrap in heavy aluminum foil to prevent freezer burn.  Label. 
    Cooking Instructions: Thaw and bake uncovered at 350 degrees 30 minutes or until heated through.

    Mexican Lasagna

    Brown a pound of ground beef (we use ground turkey) and season with salt, black pepper, chili power and cumin
    Mix two cans of enchilada sauce (I use one mild, one hot) with a can of cream of mushroom. Heat until blended.
    In a casserole dish layer flour tortillas, meat, sauce, and whatever cheese you like. Make at least three layers. Top with tortillas sauce and cheese. Bake for 25 minutes at 375. Cut into squares and serve.

    I also make a pizza casserole.

    Ingredients
    1 box rotini noodles cooked according to package
    1 lb Italian sausage browned
    2 jars of pizza sauce
    30 or so slices of pepperoni
    1 diced green pepper
    1 small red onion diced
    1 container sliced mushroom
    4 cups mozzarella (don't add if freezing)

    Mix all ingredients in a large casserole dish. Top with mozzarella and bake until bubbly.

  • Baked Spaghetti is one of my favorites:

    12 oz. spaghetti
    3/4 - 1lb. ground beef
    1 medium green pepper, chopped
    1 medium onion, chopped
    1 clove garlic, minced
    1 can (14 1/2oz.) diced tomatoes, undrained
    1 can (8oz.) tomato sauce
    1 tbsp brown sugar
    1 tsp salt
    1 tsp chili powder
    black pepper, to taste
    1/8 tsp cayenne pepper
    3/4 - 1 C shredded cheddar cheese

    Cook spaghetti according to pkg directions.  Meanwhile, in a large skillet, cook beef, green pepper, onion, and garlic until meat is no longer pink.  Stir in tomatoes, tomato sauce, and spices.  Drain spaghetti, add to beef mixture.  Transfer to a greased 13x9x2 in. baking dish.  Cover and bake at 350 for 30 min.   Uncover, sprinkle with cheese.  Bake for 5 min. or until cheese is melted.  12 servings

  • Breakfast casserole (Not super good for you, but delicious, freezes well, and something different to take to people who are ill and sick of eating Italian food)
    2 packages crescent rolls, one lb loose sausage, 1 package cream cheese, 6 eggs, 1-2 cups of cheddar cheese.
    Cook sausage and drain grease. Remove from heat and mix in the cream cheese package.
    Scramble 6 eggs (leave them pretty runny, they'll finish in the oven)
    Roll out the 1st crescent roll like a sheet (pinch shut any holes) and put it into a 9x13 pan, layer the sausage cream cheese mixture, scrambled eggs, and cheese then cover with the other crescent roll (also rolled out like a sheet with holes pinched) and bake as directed on your crescent roll package.
